- 1. In a large soup pot add all ingredients except potatoes - heat over medium heat until it comes to a boil. You want to have enough liquid to just barely cover the beans. Reduce heat and simmer another 2 - 3 hours.
- 2. Check for seasoning and adjust as needed. If it tastes a little salty it's OK, the potatoes will soak some of that up. The beans should be very tender and beginning to fall apart.
- 3. Add the new potatoes and push them down into the beans so that they're covered with liquid. If more liquid is needed add more chicken stock or water.
- 4. Raise heat to medium and bring liquid to a boil - cover and boil for 20 minutes or until potatoes are done. Taste again and adjust seasoning as needed. Enjoy!
- 5. NOTES: The beer and the bacon grease make all the difference in the taste so don't leave that out.

- 1. Steam or boil green beans until almost tender. They will cook longer in the skillet, so you don't want them mushy.
- 2. In my cast iron skillet, I add the bacon and cook until not quite crisp.
- 3. Add the onion, potatoes, garlic, salt, pepper and water. Place a lid over the skillet and cook on med for 10 - 12 minutes. Stirring occasionally. Remove lid and add the beans and more water if going dry. Remain cooking until potatoes are tender and beans are as well.
- 4. Serve hot. Gram would always make a huge skillet of these and usually would serve with fresh corn on the cob and sweet juicy tomato slices fresh from her garden. Enjoy!

- Spray a baking sheet with vegetable cooking spray.
- Set aside.
- Cut each potato in half lengthwise.

- Preheat oven to 350 degrees F.
- Scrub potatoes under running water thoroughly.
- Slice them (skin on) lengthwise into quarters.
- Slice each of the quarters across into 4 chunks.
- In a pot add potatoe chunks with enough water to cover them.
- Boil 25-35 mins or until tender when pierced with a fork.
- .
- Drain chunks.
- In a bowl mash potatoes with a hand masher to a very coarse texture adding 2 Tbs butter at the same time.
- To the potatoes gently mix in the cottage cheese, onion, garlic salt and pepper to taste.
- Pour mixture into a greased casserole dish-- place small pieces of the remaining 2 Tbs of butter over top of the potatoes.
- Sprinkle with small amount of Paprika.
- Bake uncovered for 30 mins.
- Let cool for 10 mins or so before serving.

- Peel the potatoes and cut each into quarters. There should be about 4 cups. Put the potatoes in a large saucepan and add water to a depth of about one-half inch above the potatoes.
- Add the onion, garlic and salt. Bring to a boil and cook 10 to 15 minutes or until tender. Drain the potato mixture and return to the kettle in which it was cooked. Add salt, 4 tablespoons of the butter, pepper, nutmeg and parsley.
- Mash the potatoes to a smooth texture, using the back of a large spoon. Spoon the potato mixture into a buttered baking dish (a dish measuring 6 1/2 by 11 1/2 inches is ideal), and smooth over the top. Sprinkle with Parmesan cheese and dot with the remaining 2 tablespoons butter.
- Meanwhile, preheat the broiler to high.
- Place the potatoes under the broiler 3 or 4 inches from the source of heat. Broil 6 to 8 minutes or until golden brown and slightly bubbling on top.
