Honey Cran-Raspberry Pie image

This cranberry raspberry pie is my son Michael's recipe. It was passed down to him when he got married in 2002. The pie is quite tart, but it pairs well with a favorite vanilla ice cream or a dollop of whipped cream. —Beverly Batty, Forest Lake, Minnesota

My grandma always made this at Christmas. Then my mom, and when I started baking, I also made this. It's easy and uses cranberry concentrate instead of the usual dried or fresh. It is now a family tradition with us and I hope you enjoy it as much as we do.

Tips:

- Use fresh cranberries for the best flavor. Frozen cranberries can also be used, but they should be thawed and drained before using. - If you don't have a candy thermometer, you can test the fudge by dropping a small amount into a glass of cold water. If the fudge forms a soft ball, it is ready. - Be careful not to overcook the fudge, or it will become hard and brittle. - If you want a creamier fudge, use heavy cream instead of milk. - For a richer fudge, use dark chocolate instead of semisweet chocolate. - Add nuts, dried fruit, or other mix-ins to the fudge for a customized flavor. - Store the fudge in an airtight container in the refrigerator for up to 2 weeks.
