1 cup packed brown sugar
1/2 cup sugar
1 large egg
1 tablespoon grated orange zest
1-1/2 teaspoons orange extract
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
2 cups old-fashioned oats
1 cup dried cranberries
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. 1 cup sugar
1 large egg, room temperature
2 tablespoons 2% milk
1 teaspoon vanilla extract
3 cups all-purpose flour
1-1/2 teaspoons baking powder
2 teaspoons grated orange zest
2/3 cup chopped dried cranberries
1/4 cup chopped pecans
8 to 10 drops red food coloring, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg, milk and vanilla. 3 cups rolled oats
1 cup chopped pecans

1/3 cup of orange juice (can use the fresh from the oranges you zested OR just use from a bottle)
1.5 cups of craisins or any brand dried cranberry
