GLAZED GOLDEN BEETS WITH CRANBERRIES

Glazed Golden Beets With Cranberries image

This dish incorporates a few strategies I've learned for cooking beets.

Provided by From Nourish columnist Stephanie Witt Sedgwick

Yield 4

Number Of Ingredients 9

1 tablespoon unsalted butter
1/3 cup finely diced onion
Kosher salt
1/2 cup plus 2 tablespoons coarsely chopped dried sweetened cranberries (about 2 1/2 ounces)
Finely grated zest of 1 medium orange
2 tablespoons light brown sugar
1 cup homemade or no-salt-added chicken broth
1 pound peeled, trimmed golden beets, cut into 1/2-to-3/4-inch chunks
Water (optional)

Steps:

  • 1 Melt the butter in a large saute pan over medium heat
  • 2 Add the onion and a small pinch of salt and stir to coat; cook, stirring occasionally, for 3 to 4 minutes, until the onion is soft
  • 3 Add 1/2 cup of the chopped dried cranberries, the orange zest, brown sugar and broth, stirring to combine
  • 4 Season lightly with salt
  • 5 Stir in the beets
  • 6 Increase the heat to medium-high; once the mixture comes to a boil, reduce the heat to medium; cover and cook for 20 to 25 minutes or until the beets become tender, adjusting the temperature as needed to maintain gentle bubbling at the edges
  • 7 If the broth starts to reduce to a glaze before the beets are tender, add water as needed so the beets can finish cooking
  • 8 Uncover; if the broth has not yet reduced to a glaze, increase the heat to medium-high so the liquid reduces
  • 9 Transfer the beets and their glaze to a serving dish
  • 10 Sprinkle with the remaining 2 tablespoons of chopped cranberries
  • 11 Serve right away

CRANBERRY GLAZE

Cranberry Glaze image

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes

Yield Makes about 1 1/4 cups

Number Of Ingredients 10

1 tablespoon unsalted butter
1/2 shallot, finely chopped (about 2 teaspoons)
2 fresh sage leaves
1 teaspoon whole juniper berries
1 cup fresh or thawed cranberries
2/3 cup pure maple syrup
2/3 cup apple cider, plus more if needed
1/2 cup red-currant jelly
1/4 teaspoon coarse salt
Pinch of freshly ground pepper

Steps:

  • In a medium saucepan, melt butter over medium heat. Add shallot, and cook until translucent, stirring occasionally, about 2 minutes. Add sage leaves and juniper berries; cook, stirring, 1 minute. Add cranberries, maple syrup, apple cider, jelly, salt and pepper. Raise heat to medium-high, and simmer until cranberries are soft and starting to burst, about 3 minutes.
  • Transfer cranberry mixture to a food processor, and puree until smooth. Pass puree through a fine sieve into a small saucepan.
  • Return glaze to stove, and simmer gently over medium heat until it has thickened, about 10 to 15 minutes; you should have about 1 1/4 cups. If glaze seems too thick, thin it with a little apple cider. Keep warm until ready to use.

Tips:

  • Choose the right beets: Look for beets that are firm and deep red in color. Avoid beets that are soft or have blemishes.
  • Wash the beets thoroughly: Use a vegetable brush to scrub the beets under cold water. This will help remove any dirt or debris.
  • Trim the beets: Cut off the tops and roots of the beets. Then, peel the beets using a vegetable peeler.
  • Cut the beets into even-sized pieces: This will help them cook evenly. You can cut the beets into cubes, slices, or wedges.
  • Roast the beets: Preheat your oven to 400 degrees Fahrenheit. Toss the beets with olive oil, salt, and pepper. Then, spread the beets in a single layer on a baking sheet. Roast the beets for 20-25 minutes, or until they are tender.
  • Make the glaze: While the beets are roasting, make the glaze. In a saucepan, combine cranberry sauce, orange juice, vinegar, brown sugar, and cinnamon. Bring the mixture to a simmer over medium heat. Then, reduce the heat to low and simmer for 10 minutes, or until the glaze has thickened.
  • Glaze the beets: Once the beets are roasted, toss them with the cranberry glaze. Serve the beets warm or at room temperature.

Conclusion:

Cranberry Glazed Beets are a delicious and easy-to-make side dish. They are perfect for any occasion, from a weeknight dinner to a holiday feast. The beets are roasted until tender and then glazed with a sweet and tangy cranberry glaze. The result is a dish that is both flavorful and beautiful. So next time you are looking for a new side dish to try, give Cranberry Glazed Beets a try. You won't be disappointed!
