Time 1h15m

Yield 1 loaf

Number Of Ingredients 11

2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon orange zest
1/4 cup butter, melted (1/2 stick)
1 egg, slightly beaten
3/4 cup orange juice
1 1/2 cups raisins
1 cup fresh cranberries (chopped) or 1 cup frozen cranberries (chopped)
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9 1/2 x 5 1/2 inch loaf pan.
  • Into a bowl mix all the ingredients together, in the order given.
  • Then put the mixture into the loaf pan after all ingredients are blended.
  • Bake for 1 hour.
  • Remove from pan and let it cool on a rack.

Tips:

  • Use fresh cranberries: Fresh cranberries are the best for this recipe, as they have a tart and juicy flavor. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them completely before using.
  • Don't overmix the batter: Overmixing the batter will make the bread tough. Mix the batter just until the ingredients are combined.
  • Grease and flour the pan: This will prevent the bread from sticking to the pan.
  • Bake the bread at 350 degrees Fahrenheit for 60-70 minutes: The bread is done when a toothpick inserted into the center comes out clean.
  • Let the bread cool completely before slicing and serving: This will allow the bread to set and develop its full flavor.

Conclusion:

Cranberry nut bread is a delicious and festive bread that is perfect for fall and winter gatherings. It is easy to make and can be enjoyed by people of all ages. With its tart and tangy cranberries, crunchy walnuts, and moist and flavorful crumb, this bread is sure to be a hit.
