Tips:

  • Use a sugar substitute: This recipe uses Swerve, a natural sugar substitute that is low in carbs and calories. You can use any other sugar substitute that you prefer, such as stevia or monk fruit.
  • Don't overmix the batter: Overmixing the batter can make the muffins tough. Mix the ingredients just until they are combined.
  • Fill the muffin cups only 2/3 full: This will prevent the muffins from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
  • Let the muffins cool completely before serving: This will help them to hold their shape.

Conclusion:

These cranberry orange muffins are a delicious and healthy breakfast or snack option. They are low in carbs, sugar, and calories, and they are packed with fiber and antioxidants. They are also easy to make and can be enjoyed by people with diabetes and those who are following a healthy lifestyle.
