Number Of Ingredients 7

2 boxes blueberry muffin mix
2 cups of white cranberry juice
2 cans of red cranberries
2 teaspoons vanilla
2 teaspoons cinnamon
2 1/2 cups of toasted coconut
1 egg

Steps:

  • In a large bowl mix both boxes of muffin mix and all ingredients (not using blueberries in this recipe so remove them and use for another recipe if wanted or discard). Pour batter into cans or other containers filling half way. Bake at 400 degrees for 25 minutes or until a testing skewer comes out clean. Decorate cans if desired or serve in different containers.

Tips:

  • Use fresh or frozen cranberries. Fresh cranberries are best, but frozen cranberries can be used if fresh are not available. If using frozen cranberries, thaw them before using.
  • Don't overmix the batter. Overmixing the batter can result in tough cakes. Mix just until the ingredients are combined.
  • Bake the cakes until a toothpick inserted into the center comes out clean. This will ensure that the cakes are cooked through.
  • Let the cakes cool before frosting them. This will help to prevent the frosting from melting.
  • Store the cakes in an airtight container at room temperature for up to 2 days. The cakes can also be frozen for up to 2 months.
  • Feel free to experiment with different flavors. You can add spices such as cinnamon, nutmeg, or ginger to the batter. You can also use different extracts, such as almond extract or lemon extract.

Conclusion:

Cranberry Vanilla Can Cakes are a delicious and festive treat that are perfect for any occasion. They are easy to make and can be enjoyed by people of all ages. The combination of cranberries and vanilla is a classic flavor combination that is sure to please everyone. So next time you're looking for a sweet treat, give Cranberry Vanilla Can Cakes a try!
