1 cup brown sugar
½ cup butter, softened
1 large egg
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
⅛ teaspoon salt
¾ cup white chocolate chips
½ cup dried cranberries
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese, softened
2 large eggs
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 (12 ounce) jar cherry preserves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat brown sugar and butter together in a bowl using an electric mixer until smooth and creamy. Add 1 egg, 1 teaspoon vanilla extract, and almond extract; mix until combined. 15 Oreo cookies, finely crushed (about 1-1/2 cups)
1/3 cup butter, melted
CHEESECAKE:
5 packages (8 ounces each) cream cheese, softened
1-1/2 cups sugar
1 tablespoon cranberry juice or 2% milk
1 tablespoon vanilla extract
3 large eggs, room temperature, lightly beaten
12 ounces white baking chocolate, cut into 1/2-in. pieces
1 cup dried cranberries

Steps:

  • Preheat oven to 325°. Place a greased 10-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan., In a small bowl, mix crushed cookies and melted butter. Press onto bottom of prepared pan., In a large bowl, beat cream cheese and sugar until smooth. Beat in cranberry juice and vanilla. Add eggs; beat on low speed just until blended. Fold in white chocolate and cranberries. Pour over crust. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake 60-70 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Cool cheesecake on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled. Remove rim from pan before serving.

And, for someone like me who loves cheesecake & IS ADDICTED to chocolate & to cranberries, well . . . Preparation time does not include time needed for finished cake to chill.

1 1/4 cups Oreo cookie crumbs
1/4 cup unsalted butter, melted
3 (8 ounce) packages cream cheese, softened
3/4 cup granulated sugar
3 large eggs
4 ounces white baking chocolate, melted
1/2 cup dried sweetened cranberries
1 teaspoon orange zest
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • FOR THE CRUST, mix the two crust ingredients in a bowl, then press onto bottom of 9 inch springform pan.
  • Chill to set.
  • FOR THE FILLING, beat cream cheese on medium speed until fluffy.
  • Beat in sugar until blended, then beat in eggs until blended.
  • Stir in white chocolate, cranberries, zest & vanilla.
  • Pour into prepared crust & bake 45-50 minutes or until center is ALMOST set.
  • Cool in pan for 30 minutes, then refrigerate.
  • Run knife around sides of pan to loosen, then chill 4 hours or more.
  • Remove rim & cut into wedges. Refrigerate leftovers.
