1 teaspoon lemon juice
½ cup sugar
½ cup water
2 Tablespoons cornstarch
8 ounces cream cheese softened
½ cup granulated sugar
1 teaspoon vanilla extract
3 Tablespoons all-purpose flour
½ cup powdered sugar
2 Tablespoons heavy cream
⅛ teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat, combine strawberries, sugar, lemon juice, and 1/4 cup water.

320g sheet puff pastry
1 heaped tbsp jam (apricot, raspberry or strawberry work well)
1 beaten egg
icing sugar , for dusting
clotted cream , to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unravel the puff pastry on a lightly floured surface. Cut the pastry into six squares. Spoon the jam in the centre of each pastry square. 2 sheets frozen puff pastry, thawed (approx 1 lb)
3/4 cup cream cheese
3/4 cup jam (apricot,cherry,orange marmalade,any!)
1 large egg
1 teaspoon water
1 1/2 tablespoons sugar, to sprinkle

Steps:

  • Preheat oven to 425°.
  • On lightly floured surface, roll out each sheet of pastry into a 12-inch square.
  • Cut each into four 6-inch squares; place 1 1/2 tbsp cream cheese in center of each square, then place 1 1/2 tbsp of jam.
  • Brush edges of each square with water. Fold the squares in half diagonally to form triangles, pressing edges together firmly. Press edges with tines of a fork to seal well.
