CREAM OF ASPARAGUS AND LEEK SOUP

Cream of Asparagus and Leek Soup image

This is my version of a recipe that I saw in the San Diego newspaper, but neglected to bring home with me. Try freezing the puree in smaller batches and adding the divided cream on those days when asparagus is out of season. Yummy!

Provided by Arts Protege

Categories     Vegetable

Time 50m

Yield 8-10 serving(s)

Number Of Ingredients 9

1 lb leek
1 large onion, chopped
2 stalks celery, finely chopped

CREAM OF ASPARAGUS SOUP

Provided by Sunny Anderson

Categories     appetizer

Time 50m

Yield 4 servings

Number Of Ingredients 8

1/2 stick unsalted butter
1/2 onion, chopped, (about 1/2 cup)
1 clove garlic, crushed
Salt and freshly ground black pepper
2 pounds asparagus, ends trimmed and cut into 1-inch pieces
6 cups chicken stock
1 pint sour cream, room temperature
2 teaspoons Hungarian hot paprika, for garnish

Steps:

  • Melt butter in a large saucepan over medium-high heat. Add onion and garlic, and saute 5 minutes. Season with salt and pepper. Add asparagus and saute another 4 minutes. Add the chicken stock and bring to a boil. Reduce to simmer and cook for 30 minutes, until asparagus is very tender. *Carefully transfer to a blender and puree until smooth. Return to saucepan, stir in sour cream and season with salt and pepper, to taste. Transfer to serving bowls. Dust with paprika and serve.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

PAN-ROASTED ASPARAGUS SOUP

Pan-Roasted Asparagus Soup image

This simple soup can be ready in under an hour and takes full advantage of the flavor of asparagus by pan-roasting it before puréeing. Fresh tarragon takes it up a notch.

Provided by Mark Bittman

Categories     soups and stews, appetizer

Time 40m

Yield 4 servings

  • Add stock and some salt and pepper; bring to a boil, reduce heat and simmer until asparagus is very tender, about 10 minutes. Cool at least a few minutes.
  • Pour soup into a blender, in batches if necessary, and carefully purée. Return to pan, and, over medium-low heat, reheat gently. When soup is hot, adjust seasoning. Put 3 or 4 asparagus flower ends in each of 4 bowls; ladle in soup, and serve.

ASPARAGUS, LEEK, AND POTATO SOUP

Asparagus, Leek, and Potato Soup image

This was just a creation I came up with when my asparagus was looking a little old. At first, I thought I was going to add some sort of cream base, but the soup ended up not needing it. The vegetables just taste lovely as they are. Even my husband who hates soup and asparagus LOVED this! It is also a great way to use almost-expired vegetables in your veggie drawer!

OVEN-ROASTED ASPARAGUS AND LEEKS

Oven-Roasted Asparagus and Leeks image

This oven-roasted asparagus and leek recipe is simply delicious. If thick asparagus is unavailable, use thin spears, and adjust the cooking time; thin asparagus will cook faster.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Number Of Ingredients 6

6 medium leeks
20 thick asparagus spears (about 1 pound)
1 tablespoon olive oil
1/2 teaspoon salt
Freshly ground pepper, to taste
Balsamic vinegar (optional)

Steps:

  • Trim each leek at the root end, making sure the stalk stays intact, then cut off the top where the green part begins. Cut leeks in half lengthwise. Immerse in a bowl of cold water to loosen any sand or grit. Rinse under cold running water, and pat dry.
  • Heat oven to 400 degrees. Trim tough ends from asparagus. In a large bowl, combine asparagus and leeks. Drizzle olive oil over vegetables, and toss to coat. Add salt, and season with pepper; toss to combine.
  • Place vegetables in a heavy roasting pan, and transfer to oven. Roast until vegetables start to turn brown and are fork tender, about 25 minutes. Remove pan from oven, and set on heat-proof surface until vegetables are cool enough to eat. When ready to serve, drizzle with balsamic vinegar, if desired.

Tips for Making Cream of Asparagus and Leek Soup:

- Choose fresh, tender asparagus and leeks. Look for asparagus spears that are bright green and have tightly closed tips. Leeks should be firm and have no signs of wilting. - Clean the asparagus and leeks thoroughly. Rinse the asparagus spears and leeks under cold water. Trim the tough ends of the asparagus spears and remove any dirt or grit from the leeks. - Cut the asparagus and leeks into small pieces. This will help them cook evenly and quickly. - Use a good quality vegetable broth. The broth is the base of the soup, so it's important to use a broth that has a lot of flavor. If you don't have time to make your own broth, you can use a store-bought broth. - Don't overcook the asparagus and leeks. They should be cooked until they are tender but still have a little bit of crunch. - Puree the soup until it is smooth. You can use a blender or an immersion blender to puree the soup. - Season the soup to taste. Add salt, pepper, and any other seasonings you like. - Serve the soup hot. Cream of asparagus and leek soup is a delicious and hearty soup that is perfect for a cold day.

Conclusion:

Cream of asparagus and leek soup is an easy-to-make soup that is packed with flavor. It's a great way to use up fresh asparagus and leeks. This soup is also a good source of vitamins and minerals. It's a delicious and healthy soup that is perfect for a cold day.
