CREAM OF CAULIFLOWER SOUP II

Cream of Cauliflower Soup II image

I make lots of cream soups and this is a good 'basic' recipe. I originally made this in 1990 and always make some modifications - we like lots of garlic as reflected in this recipe!! I also add or substitute other vegetables, i.e., broccoli and spinach. I also use potatoes for thickening rather than cream to keep the fat down.

Tips:

  • Use fresh, high-quality ingredients: The better the ingredients, the better the soup will taste. Look for fresh, crisp cauliflower and walnuts, and use a flavorful vegetable broth.
  • Don't overcook the cauliflower: Cauliflower should be cooked until it is tender but still has a slight crunch. Overcooked cauliflower will be mushy and bland.
  • Roast the walnuts before adding them to the soup: Roasting the walnuts will bring out their flavor and make them more fragrant.
  • Use a good quality immersion blender: An immersion blender is the best way to get a smooth, creamy soup. If you don't have an immersion blender, you can use a regular blender, but be careful not to over blend the soup or it will become too thick.
  • Season the soup to taste: Once the soup is blended, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.

Conclusion:

Cream of walnut and cauliflower soup is a delicious, healthy, and easy-to-make soup that is perfect for a cold winter day. It is also a great way to use up leftover cauliflower and walnuts. The soup can be served as a main course or as a side dish. It is also a great option for a vegan or vegetarian meal.
