Steps:
- Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
- Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
- Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
- Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

APPLE-SOUR CREAM CRUMB PIE
After a brief time in a 450-degree oven, this pie bakes at 350 degrees. You'll want to use an oven thermometer to monitor the temperature. Because of the dense filling, a long cooling time is essential before slicing and serving.

APPLE CRUMB PIE
Steps:
- For the pie dough: Pulse the flour with the sugar and salt in a food processor. Add the butter and shortening, and pulse just until the mixture resembles coarse meal. Add the ice water, and process until the dough just starts to form a ball. Transfer the dough to a floured work surface, and knead gently for 1 minute. Pat the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour. (The crust can be prepared a day ahead. Soften slightly at room temperature before rolling out.)
- On a lightly floured work surface, roll out the dough to an 11-inch round, about 1/4 inch thick. Transfer dough to a 9-inch ceramic or glass deep-dish pie pan, and roll a rolling pin over the pan to trim the overhang. Using a fork, prick the bottom of the pie shell all over, and refrigerate until firm, at least 20 minutes.
- Preheat the oven to 350 degrees F.
- For the filling: Toss the apples, lemon juice, sugar, flour, cinnamon, allspice, nutmeg, and salt in a large bowl. Let the apple mixture sit out at room temperature for 10 minutes, then mound it in the pie shell.
- For the topping: Mix the flour, oats, brown sugar, cinnamon, allspice, and salt in a large bowl. Cut the butter into the mixture until it forms pea-sized lumps. Stir in the pecans.
- To assemble: Sprinkle the crumb topping on top of the mounded filling in the chilled pie crust, and place on a sheet tray. (The dish will be so full that you may need to press the topping on around the edges. Juice will definitely overflow the pie plate.) Bake for 1 hour and 10 minutes, until the apples are tender and juicy. Let cool for at least 10 minutes before serving warm. Top each slice with vanilla ice cream.
Tips:
- For the perfect crumb topping, use a combination of oats, flour, brown sugar, and butter. - To prevent a soggy bottom crust, pre-bake the crust for 10-15 minutes before filling it. - If you don't have a pastry blender, use two forks to cut the butter into the flour mixture for the crust. - To keep the apples from browning, toss them with lemon juice or ascorbic acid before adding them to the pie. - To prevent the pie from boiling over, place a baking sheet underneath the pie plate before baking. - To check if the pie is done, insert a toothpick into the center of the filling. If it comes out clean, the pie is done. - Let the pie cool for at least 1 hour before serving to allow the flavors to meld. Conclusion:
This creamy apple crumb pie is easy to make and simply delicious. With its flaky crust, creamy filling, and crunchy crumb topping, this pie is sure to be a hit. You can enjoy this pie on its own or serve it with a scoop of vanilla ice cream or whipped cream. No matter how you choose to serve it, this pie is sure to be a crowd-pleaser.
