This Cauliflower Ranch Dip is a low-fat, low-calorie, dairy-free ranch dip that is sure to please even the most devoted ranch lover.

1 ½ cups steamed cauliflower florets
½ cup unflavored almond milk
2 tablespoons grapeseed oil
2 tablespoons apple cider vinegar
2 tablespoons hemp seeds
½ teaspoon Dijon mustard
¼ teaspoon garlic powder
Shot of hot sauce, to taste
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
2 tablespoons fresh chives, minced

Steps:

  • 1. Place the cauliflower in a blender, along with the almond milk, grapeseed oil, apple cider vinegar, and hemp seeds. Blend for a full minute, or until completely smooth and creamy. 2. Add the Dijon mustard, garlic powder, hot sauce, along with the sea salt and black pepper, then blend to combine. Taste and adjust salt and pepper if needed. Add the chives and blend briefly just to incorporate, without processing the chives too much. 3. Transfer the dip to a serving bowl or a resealable container, and refrigerate for 1 hour to chill before serving. It will keep, refrigerated, for 1 week. Tip: This dip is especially good with fresh vegetables, particularly broccoli and carrots. It may also be enjoyed with roasted sweet potato fries or roasted carrots. This creamy cauliflower based dip is so delicious you'd never guess it to be low fat! Delicious as a dip for veggies, pita chips, pretzels, etc. It is also fantastic used in wraps and as a sandwich spread. (great flavourful alternative to mayo!) This is also a great way to sneak some veggies to your kids when served with crackers or chips. :)

1/2 head cauliflower, chopped
1 green onion, with top, chopped into 1 inch pieces
3 tablespoons fat free sour cream
2 tablespoons dry ranch dressing mix
salt and pepper, to taste (optional)

Steps:

  • Break cauliflower into florets. In medium saucepan, bring about 2 inches of water to a boil. Add cauliflower, cover and simmer until tender, about 15 minutes. Run under cold water to stop the cooking; drain well.
  • In a food processor, puree cauliflower and green onion until fairly smooth. Scrape down sides, add sour cream and dressing mix. Process until combined. season with salt and pepper, if desired.
  • Remove to serving bowl and refrigerate until chilled.
  • Serve with fresh veggies, crackers, pita chips or anything else you want to dip. :).

12-16 ounces frozen cauliflower (1 bag)
2 T mustard (Dijon, brown, or spicy preferred)
1 T lemon juice
6-8 T vegetable broth

Steps:

  • Steam cauliflower for 13-15 minutes. (I use a microwave steamer basket. You can do this in the microwave or on stove top.) Cauliflower should be much softer that it would be for eating.
  • Allow to cool for 10 minutes so it's not too hot to handle.
  • Pour cauliflower into blender or food processor. Add mustard and lemon juice. Puree. Add broth 1 T at a time until you have a very smooth consistency. Chill.

I also use it on my sandwiches instead of just plain mayo to give me lots of taste without fat. The cooking time includes the 1hr chilling time.

1 cup roasted sweet red pepper, from a jar, roughly chopped
1 cup fresh basil leaf
1 cup fat-free mayonnaise
1 1/2 cups nonfat plain yogurt
2 tablespoons dried onion flakes
1 teaspoon garlic powder

  • Put the sweet peppers and bail into a food processor or mini chopper and blitz for about 30 seconds until the sweet peppers are really finely chopped and combined with the basil.
