CREAMY, CHEESY POTATO CASSEROLE
A friend of my mother's made this when I was younger. It was the BEST potato dish I'd ever had. Thirty years later - and lots of tinkering - I finally replicated it. Now my husband and kids are big fans, too. I hope your family enjoys this as much as we do.

Steps:
- Preheat oven to 350.
- Butter 2.5 quart casserole dish and set aside.
- Bring 6 quarts of water to boil.
- Peel the potatoes, rinse them, then slip them into the boiling water. Cook them until they are easily pierced with a fork (around 15 minutes). Drain, return to pot and immediately mash with hand-masher or beater.
- While potatoes are cooking, melt 1/4 cup butter in a saucepan over medium heat. Once melted, stir in the can of soup. Remove the pan from heat.
- Blend into soup mixture: sour cream, onion (reserve a few for garnish) and the shredded cheddar.
- Stir this soup mixture into the mashed potatoes.
- Pour it all into buttered 2.5 quart casserole.
- Mix cornflakes with melted 2 T. butter. Sprinkle on top of potatoes.
- Bake 45 minutes at 350.
- Sprinkle with reserved chopped green onions before serving.
CREAMY CHEESY CHILI POTATO CASSEROLE
After making way too much homemade chili, I came up with this recipe to use up the leftovers. I haven't seen this one anywhere else, but it is delicious, easy, cheap, and filling.

- Mix sour cream, cottage cheese, about 1/2 the cheddar, garlic, salt, pepper& basil in large mixing bowl.
- Add potatoes and onions, mix well.
- Pour mixture in a 13 by 9 pan that you sprayed with Pam.
- Pat down with the back of your spatula.
- Sprinkle remaining cheese over top.
- In a baggie, crush corn flakes and then add some salt, pepper and garlic powder and toss around a bit.
- Sprinkle corn flake mixture over top of cheese.
- Bake 375 for about an hour.

- 1. In large bowl, blend soups and cream cheese. Microwave til creamy and cheese is melted, stirring occasionally. Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes. Fold well til all potatoes are coated. Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly. Sprinkle top with rest of shredded cheese. COVER and bake at 350ยบ for 50-55 minutes. Uncover, top with onions. Bake UNCOVERED for another 5 minutes or til onions are lightly browned. *Nice additions: 1 cup diced, fully-cooked ham. Cooked, crumbled bacon (4-6 slices). Sauted onions. Sauted mushrooms.
Tips:
- For a richer flavor, use a combination of cheeses, such as cheddar, Monterey Jack, and Parmesan.
- To make the casserole ahead of time, prepare it up to 24 hours in advance and refrigerate. When ready to bake, let it come to room temperature for 30 minutes before baking.
- If you don't have a casserole dish, you can use a 9x13 inch baking dish.
