  • Place potatoes and garlic in a medium saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Cook 8 minutes, until potatoes are fork-tender. 6 chicken thighs
2 teaspoons lemon pepper seasoning, divided
1/4 cup flour (use gluten free flour for gluten free version)
2 tablespoons olive oil
1 teaspoon olive oil
1/2 tablespoon butter
5 garlic cloves, minced
3/4 cup chicken stock
1 teaspoon lemon, pepper seasoning
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese or 1/2 cup parmesan cheese
2 tablespoons fresh lemon juice
3 green onions, green part only, chopped
2 tablespoons parsley, chopped
3 lemon slices, for garnish

Steps:

  • Chicken Thighs:.
  • Preheat oven to 375°F.
  • In zip-top bag, place 2 teaspoons of lemon pepper seasoning with flour and shake to mix thoroughly. Briefly shake thighs, 2 or 3 at a time, till coated.
  • Heat 2 tablespoons olive oil on medium-high heat in a large skillet. Add chicken thighs skin side down and cook for about 4 minutes until browned. Flip the chicken thighs over and cook for 2 minutes on the other side. Remove from heat. Put chicken thighs skin side up (crispy side up) on a baking sheet and bake at 375 F for about 20-25 minutes, until the chicken is fully cooked, the juices run clear and the chicken is no longer pink in the center.
  • Creamy Sauce:.
  • In the mean time, while the chicken is baking, make the sauce: Wipe the skillet you used for cooking the chicken thighs. Add 1 teaspoon olive oil and 1/2 tablespoon butter to skillet. Add minced garlic and cook, constantly stirring, for about 30 seconds. Add chicken stock and 1 teaspoon lemon-pepper seasoning to the skillet and bring to light boil. Add heavy cream and bring back to boil. Add shredded cheese and stir until melted. Reduce heat to simmer and keep stirring until the sauce is smooth. Remove from heat. Add 2 tablespoons freshly squeezed lemon juice and stir inches Top the sauce with chopped green onions (chop up only green portion of green onions and don't use white portion). Keep the sauce covered.
  • The chicken should be cooked by now. Check it for doneness and if chicken is completely cooked through, add it to the skillet on top of the sauce and on top of green onions. Top with chopped parsley and decorate with a few slices of lemon.

Steps:

  • 1) Mix all the ingredients for the sauce until you get them all combined. 2) Cut your carrot into noodles. 3) Pour sauce over the carrots and gently mix them by hand to coat. 4) Top with parsley, sesame and pine nuts and serve fresh. Keeps well in the fridge overnight.

SALMON CAKES WITH CREAMY GARLIC SAUCE



Salmon Cakes with Creamy Garlic Sauce image

Number Of Ingredients 13

2 cups Cooked salmon, flaked
1/2 cup Bread crumbs or Panko, plus more to coat the patties
4 tablespoons Medium shallot, minced
2 tablespoons Minced herbs like dill, fennel fronds, or parsley
1/4 cup Mayonnaise
1 clove Large clove garlic, minced
1 ear Large egg
2 teaspoons Dijon or yellow mustard
1/4 cup Mayonnaise
2 cloves Garlic cloves, shaved, pressed or finely minced
1 tablespoon Lemon juice
1 dash Heavy cream (to thin if needed)
1 pinch Salt, to taste

Steps:

  • Combine the flaked salmon, bread crumbs, shallot, garlic clove, and herbs in a medium mixing bowl. Whisk together the mayonnaise, egg, and mustard in a small bowl, then pour on top of the salmon. Stir until everything is evenly mixed
  • Divide and shape the salmon into six medium or eight small patties. Place them on a plate, spaced a little apart. At this point, the patties will feel very loose and wet; transfer the patties to the refrigerator and chill for at least 15 minutes (or cover and refrigerate for up to a day). This helps firm up the fish cakes and makes them easier to fry.
  • While the salmon cakes chill, whisk together he mayonnaise, garlic and lemon juice. Add heavy cream, one tablespoon a a time, to thin it to a pourable consistency if needed. Cover and set aside for at least 15 minutes, or refrigerate for up to a week. The flavors will taste very harsh at first, but will mellow with time. Taste the mayo after it's had time to mellow a bit and add salt if needed.
  • When ready to cook the salmon cakes, film a large skillet with olive oil and set over medium-high hear. While the skillet heats, place a few spoonfuls of bread ctrumbs on a plate or bowl and dip each patty to coat with crumbs. When the pan is hot enough that a flick of water evaporates right away, place the salmon cakes in the pan spaced a little apart.
  • Fry the cakes for 3 to 5 minutes, until golden on the underside. Flip and fry for another 3 to 5 minutes. If they seem to be frying too quickly, adjust the heat.
  • Transfer the patties to serving plates, top with some of the creamy garlic sauce, and serve while still hot. These salmon cakes are great with a green salad on the side.

This is a great tasting dish that you can have on the table in under an hour. I worked on this for a bit until I got the proportions correct. I think that the bacon, and the cream cheese just send it over the top. So, you ready... Let's get into the kitchen.

2 slice thick-sliced bacon, chopped
2 oz sun-dried tomatoes in olive oil, chopped
2 clove garlic, minced
1/4 lb shrimp, 60 count, shelled & deveined
salt, kosher variety, fine grind, to taste
1/4 tsp sweet paprika
1/2 tsp dried basil
3/4 c half & half
1/4 tsp crushed red pepper
1 oz cream cheese, softened
1/4 c parmesan cheese, freshly grated
8 oz pasta, your choice

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Add the bacon to a large sauté pan over medium heat.
  • 4. Cook until beginning to brown.
  • 5. Add the sun-dried tomatoes, basil, and garlic to the pan.
  • 6. Sauté until the garlic is fragrant, about 1 minute.
  • 7. Add the shrimp, a pinch of salt, and the paprika, to the pan.
  • 8. Stir and sauté for an additional 2 minutes.
  • 9. Add the half & half, and crushed red pepper to the pan.
  • 10. Bring up to a simmer.
  • 11. Add the softened cream cheese, and Parmesan.
  • 12. Stir until the cheese is melted.
  • 13. Chef's Note: If the sauce is still too thick, add half & half a bit at a time, until the desired consistency is achieved.
  • 14. PLATE/PRESENT
  • 15. Plate with some good pasta. Enjoy.
  • 16. Keep the faith, and keep cooking.

Tips:
