CREAMY ROASTED GARLIC SOUP

Creamy Roasted Garlic Soup image

After two weeks of searching and trying recipes I finally found one (making a few modifications)to copy a recipe my DH had at a restaurant in Ohio. If you are a garlic lover, then this is a must for you. It's very creamy and the roasted garlic flavor is out of this world! Prep time includes the 1 hour to roast the garlic. But if you are like me, there is always some on hand in the refridgerator.

SOUPE A L'AIL / CREAMY GARLIC SOUP

SOUPE A L'AIL / CREAMY GARLIC SOUP image

Categories     Soup/Stew     Vegetable     Vegetarian     Low/No Sugar     Wheat/Gluten-Free     Christmas Eve     Simmer

Yield 4-6 people

Number Of Ingredients 8

2 Tablespoons olive oil
2 Tablespoons butter
1 cup whole, peeled garlic cloves
1 small yellow onion, peeled & diced
1 cup potato, peeled & diced
4 cups chicken stock
2 cups half & half
salt & white pepper to taste

Steps:

  • Melt butter with olive oil in a 5 quart heavy-bottomed non-reactive pot over medium heat. (I prefer enameled iron for even heat conduction.) Add whole garlic cloves and onions. Saute over medium to medium-low heat for 15-25 minutes. Stir often. Cook until garlic and onions are soft and light golden brown. Cook slowly to develop the sweetness of the garlic. Add the chicken broth and the potato. Bring soup to a boil. Cover, reduce heat and simmer, stirring occasionally, until the potato is fork tender, about 15-20 minutes. Remove the pot from the heat. Carefully pass the soup through a food mill. A food processor or blender will work, but will not give you the same texture, because the food mill removes the fibrous parts of the garlic, while a process chops them up and they remain in the soup. Return soup to heavy bottom pot. Heat just to boiling over medium heat. Reduce heat to medium low, add half and half and heat, stirring often, until warmed through. Taste for seasoning and add salt and white pepper to taste. Ladle into serving bowls and garnish with a chiffonnade of tangy greens, like arugula or mesculin.

CREAMY CAULIFLOWER-GARLIC SOUP

Creamy Cauliflower-Garlic Soup image

I love cauliflower and I love garlic so this was a no-brainer for me when I found it in the 12/2004 issue of Sunset magazine. The roast garlic gives this soup a wonderful, mellow flavor. This makes a large amount of soup so it's perfect for a dinner party or holiday meal.

Provided by Hey Jude

Categories     Cauliflower

Time 1h25m

Yield 3 quarts, 10-12 serving(s)

Number Of Ingredients 9

1 head garlic, unpeeled (2 1/2 oz.)
1 tablespoon butter
3 heads cauliflower (about 4 1/2 lbs. total)
2 quarts low-fat chicken broth
1/2 cup whipping cream
1/4 teaspoon ground nutmeg
salt, to taste
fresh ground pepper, to taste
2 tablespoons thinly sliced fresh chives

Steps:

  • With a sharp knife, cut top 1/2 off garlic head (off the pointy part of the head). Set garlic on a sheet of foil and top with butter. Gather sides of foil up and pinch together to form a loose, sealed pouch.
  • Bake garlic in a 400° oven until garlic is soft when pressed, 45 to 50 minutes. Unwrap and let stand until cool enough to handle.
  • Meanwhile, cut cauliflower heads into 1-inch florets, discard leaves and stems. In a 4 to 5-quart pan, combine cauliflower and broth. Cover, bring to a simmer over high heat, then reduce heat and simmer until cauliflower is very tender when pierced, 12 to 15 minutes.
  • Squeeze garlic cloves from papery skins into pan with cauliflower and broth; pour in cream. Working in batches, transfer to a blender and whirl until smooth (I use an immersion blender at this point). Return soup to pan and add the nutmeg and salt and pepper to taste.
  • Set pan over medium-low heat and stir occasionally until hot. Pour into a large bowl or tureen and sprinkle with chives.

CREAMY ZUCCHINI GARLIC SOUP

Creamy Zucchini Garlic Soup image

Don't let the amount of garlic scare you, this comes out with a nice but not overpowering garlic flavor which pairs wonderfully with the zucchini. This soup is delicious as soon as it's made but it's so much better the next day!

Provided by Donna Graffagnino

Categories     Cream Soups

Time 45m

Number Of Ingredients 8

4 Tbsp butter
9 large cloves garlic, sliced
1 large onion, sliced
4 medium zucchini, sliced or diced, peeled is optional
4 c chicken broth
1/2 tsp ginger paste or gound ginger
2 tsp creole seasoning (tony cacherie's)
salt and white pepper to taste

Steps:

  • 1. Melt the butter in a heavy 4-quart pot over medium heat. When it foams, add the sliced garlic and onions and cook on low heat for about 20 minutes, or until the onion is soft and translucent. Don't let the garlic brown.
  • 2. Add the zucchini to the onions and garlic and cook until it begins to soften, about 10 minutes.
  • 3. Add the chicken broth and bring to a low boil. Reduce heat and simmer at a medium-low heat for 45 minutes.
  • 4. Remove from heat and blend zucchini with an immersion blender until creamy. You can also transfer, in batches, mixture to a blender to puree. Let mixture cool a bit before blending in mixer and only fill blender 1/2 full per batch.
  • 5. Add ginger, white pepper, and creole seasoning. Taste before adding salt, it may not need it. Ladle into a bowl and serve with garlic bread.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final product. For the best results, use organic or local vegetables, herbs, and spices.
  • Don't overcrowd the pot: If you overcrowd the pot, the vegetables won't cook evenly and the soup will be watery. Add the vegetables in batches, if necessary.
  • Cook the vegetables until they're soft: The vegetables should be soft enough to easily blend into a smooth puree. If they're not soft enough, the soup will be grainy.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good one. Use a broth that is flavorful and has a rich body.
  • Season the soup to taste: Don't be afraid to add salt, pepper, and other seasonings to the soup. Taste it as you go and adjust the seasoning accordingly.
  • Garnish the soup before serving: A few simple garnishes can make the soup look and taste even better. Try adding a dollop of sour cream, a sprinkle of fresh herbs, or a drizzle of olive oil.

Conclusion:

Creamy garlic soup is a delicious, comforting, and easy-to-make dish that is perfect for any occasion. With just a few simple ingredients, you can create a flavorful and satisfying soup that the whole family will enjoy. So next time you're looking for a quick and easy meal, give creamy garlic soup a try. You won't be disappointed.
