Creamy Lime Coconut Bars image

This recipe came from Land O Lakes butter. I had to try them once just to see if they were as good as they sound, and believe me, they didn't last in my house past two days. I ate a big hunk every time I got hungry. Yes, I know, fully sugared, but everyone deserves a treat!

Time 45m

Number Of Ingredients 11

1 1/2 c finely crushed pretzels
1/2 c granulated sugar
1/2 c melted butter
2 can(s) Eagle brand sweetened condensed milk (14 oz each)
3 large eggs, beaten
1/2 c freshly squeezed lime juice (4 limes)
1 tsp orange juice
1 Tbsp grated lime peel
powdered sugar
Cool Whip
lime slices

Steps:

  • 1. Heat oven to 350°F. Line 13 x 9-inch baking pan with parchment paper.
  • 2. Combine pretzels, granulated sugar, and butter in medium bowl; mix well. Press crumb mixture firmly onto bottom of prepared pan.
  • 3. Bake crust for 7 to 10 minutes.
  • 4. Mix sweetened condensed milk, eggs, lime juice, orange juice, and lime peel in a large bowl.
  • 5. Pour evenly over crust.
  • 6. Bake 25 minutes. Cool and chill.
  • 7. May garnish with powdered sugar, whipped topping, and lime slices before serving. Cut into bars.

Tips:

  • For a richer, creamier filling, use heavy cream instead of milk.
  • Add a teaspoon of lime zest to the filling for an extra burst of citrus flavor.
  • If you don't have a 9x13 inch baking pan, you can use a 10x15 inch pan, but you will need to adjust the baking time.
  • Be sure to let the bars cool completely before cutting and serving, otherwise they will be too soft and gooey.
  • Store the bars covered in the refrigerator for up to 5 days. You can also freeze them for up to 2 months.

Conclusion:

Creamy Lime Bars are a delicious and refreshing dessert that is perfect for any occasion. They are easy to make and can be customized to your liking. Whether you prefer a tart or sweet filling, or a thick or thin crust, these bars are sure to please everyone. So next time you are looking for a special treat, give Creamy Lime Bars a try.
