CREAMY MACARONI SALAD

Creamy Macaroni Salad image

I have looked all over for a great macaroni salad; this one is it! It's easy and is a huge hit at every function I take it to. The sauce for this is a great creamy sauce. I like my salads to have a lot of creamy dressing, so I always make an extra half batch of the wet mix and add it as necessary to get the salad more wet because the pasta soaks up the sauce.

CREAMY CHICKEN MACARONI SALAD

Creamy Chicken Macaroni Salad image

Lisa, who lives next door, gave me this recipe several years ago. This is really a delicious chicken salad. The red grapes and the brown in the sliced almonds will help to give it color and make it look more appealing, so do resist the temptation to used green grapes and/or blanched almonds. This is great as a potluck dish or as a meal on a hot day. As with any dish containing mayonnaise, please use caution and keep cool until serving. Keep any extras refrigerated for safety's sake. This is a meal for four very hungry people or as a side dish for over a dozen adults. Cooking time includes cooking the chicken and macaroni (at the same time) while cutting the grapes.

SUPER CREAMY MACARONI SALAD

I make several different kinds of macaroni salads, but this one is my hubby's favorite and the one I make when I need to please everybody! Time 20m

Number Of Ingredients 11

2 1/2 cups uncooked macaroni
SAUCE:
2 cups mayo
1/3 cup sweet pickle relish
3 tbl. sugar
3 tbl. sweet pickle juice from sweet butter pickles
1 tsp. regular salt
1 tsp. celery salt
2 tsp. regular table mustard
2 tbl. dried minced onion
*1 tbl. milk

Steps:

  • 1. In large bowl, mix all sauce ingredients except milk, stirring well, set aside. Cook macaroni according to package directions. Drain, rinse with cold water to stop cooking and chill, drain again, and stir into sauce mixture. Chill in fridge for 30 minutes to one hour. Stir in 1 Tbl. milk to loosen and serve! Enjoy!
  • 2. ***SECRET TIP! Forgot to put this in here! After you drain your macaroni, put it in a small shallow bowl and pour 1/3-1/2 cup of milk over it. Keep stirring now and then and let the macaroni absorb all or most of the milk. This will take about 20-30 minutes, but WORTH IT. The pasta won't be soggy or anything, but will help GREATLY with stopping the sauce from soaking in too much and be dry. Just drain any excess milk before stirring into the sauce. You will then only have to add a TAD of mayo or milk to refresh the salad instead of a gallon more of mayo!

COOL AND CREAMY MACARONI SALAD RECIPE

Cool and Creamy Macaroni Salad Recipe image

Provided by Patlynn

Number Of Ingredients 11

Table salt
1 pound elbow macaroni
1/2 small red onion , minced
1 rib celery , minced
1/4 cup minced fresh parsley leaves
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1/8 teaspoon garlic powder
Pinch cayenne pepper
1 1/2 cups mayonnaise
Ground black pepper

Steps:

  • Don't drain the macaroni too well before adding the other ingredients--a little extra moisture will keep the salad from drying out. If you've made the salad ahead of time, simply stir in a little warm water to loosen the texture. 1. Bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and macaroni and cook until nearly tender, about 5 minutes. Drain in colander and rinse with cold water until cool, then drain briefly so that macaroni remains moist. Transfer to large bowl.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your macaroni salad. Choose high-quality mayonnaise, vinegar, mustard, and cheese. Freshly cooked macaroni is also best.
  • Cook the macaroni al dente: This means that the macaroni should be cooked until it is just tender, but still has a slight bite to it. Overcooked macaroni will be mushy and not hold its shape.
  • Cool the macaroni before adding the dressing: This will prevent the dressing from absorbing too much of the macaroni's starch and becoming runny.
  • Use a variety of vegetables: This will add color, flavor, and texture to your macaroni salad. Some good options include celery, carrots, onions, bell peppers, and peas.
  • Add some protein: This will make your macaroni salad more filling and satisfying. Cooked chicken, ham, bacon, or tuna are all good options.
  • Use a light hand with the dressing: Too much dressing can weigh down the macaroni salad and make it greasy. Add just enough dressing to coat the macaroni and vegetables.
  • Season to taste: Be sure to taste the macaroni salad before serving and adjust the seasonings as needed. Add more salt, pepper, or vinegar to taste.

Conclusion:

With its creamy, tangy dressing, tender macaroni, and colorful vegetables, macaroni salad is a classic side dish that is perfect for potlucks, picnics, and barbecues. By following these tips, you can make the best macaroni salad that will be a hit with everyone who tries it.
