From Cooking Light, this is a wonderful side or light main dish. It is good even without the pine nuts if you don't have them on hand, also any herb will work for the basil, you just may need a little more or less depending on the herb.

1 tablespoon butter
1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1/4 cup parmesan cheese, fresh is better
2 tablespoons fresh basil, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
4 teaspoons pine nuts, toasted

Steps:

  • Heat butter in a medium saucepan over medium heat. Add orzo and cook 3 minutes, stirring constantly.
  • Stir in broth and water; bring to a boil. Reduce heat and simmer until liquid is absorbed, and orzo is done, about 15 minutes.
  • Remove from heat; stir in cheese, basil, salt and pepper. Sprinkle with pine nuts. Serve immediately.

1 tbsp all purpose flour
1 cup milk (I used whole)
1/3 cup parmesan cheese
1/2 tsp salt
1/8 tsp ground black pepper
1/8 tsp cayenne pepper
1 tbsp fresh parsley (chopped)

Steps:

  • In a large pot of boiling water, cook orzo according to the package's directions.
  • Meanwhile, in a large skillet set over medium heat add the butter. When the butter has melted, add the garlic and shallot, cook until fragrant and translucent, about 2-3 minutes. Whisk in flour, cook for 1 minute (whisking continuously). Slowly whisk in the milk, cook until slightly thickened, about 4 minutes.

2 tablespoon olive oil
4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.

1 cup orzo pasta
3 tablespoons extra virgin olive oil
1/4 cup diced onion
2 garlic cloves, minced
2 (10 1/2 ounce) cans chicken broth, warmed. (I like campbells)
1/2 cup parmesan cheese
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • heat the olive oil in a skillet over about medium-high heat.
  • add onion and saute for a few minutes
  • add garlic and orzo pasta and saute until the orzo is starting to brown slightly.
  • add a dash of salt and pepper. BE CARFUL WITH THE SALT! with the chik. broth and parmesan cheese it will be to salty if you add too much.
  • Start adding the warmed chicken broth a little at a time letting it evaporate before you add more. Do this with about half of the chicken broth and then pour in the rest of it.
  • Let this come back to a simmer.
  • cover and reduce heat to low.
  • simmer for about 30 minutes or until orzo is al dente.
  • Just before serving add parmesan cheese to taste. I use a couple of palms full.

2 tablespoons olive oil
1 large shallot, finely chopped
1 garlic clove, minced
1 (14.5-ounce) can diced tomatoes, juices drained
1 1/4 cups whipping cream
1 cup frozen peas, thawed

Steps:

  • Bring a heavy large saucepan of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Meanwhile, heat the oil in a heavy large frying pan over medium heat. Add the shallot and garlic, and saute until tender, about 2 minutes.
