CHEESE TORTELLINI WITH CREAMY TOMATO AND SPINACH SAUCE
This is a copycat recipe from a local chain of restaurants. They took it off their menu, so I had to develop my own. It turned out so good, it might be just better than the original. Garnish with more basil and Parmesan.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top but skin is nearly soft, about 2 minutes. Drain well.
- Slice sun-dried tomatoes thinly. Heat 1 tablespoon reserved tomato oil in a large skillet over medium-high heat. Season chicken with salt and pepper and add to the skillet; saute until golden, 3 to 4 minutes. Add garlic and stir for 30 seconds. Pour in sun-dried tomatoes, diced tomatoes, cream, and white wine; bring to a boil. Reduce heat to medium-low, cover skillet, and simmer until chicken is just cooked through, about 3 minutes.
- Transfer chicken to a separate dish. Add spinach and basil to the skillet and stir. Increase heat slightly and boil until sauce thickens enough to coat the back of a spoon, about 3 minutes. Season sauce with salt and pepper. Return chicken and cooked tortellini to skillet; cook and stir over medium heat until heated through, about 2 minutes more. Stir in Parmesan cheese.

SPINACH IN CREAMY FETA SAUCE
Greek flavor with a Southern twist. I love Southern-style creamed spinach, but I also love the combination of spinach and feta found in Greek cookery. This recipe pulls it all together. You could really dress this up by topping with buttered breadcrumbs and baking until the top is crunchy.

GARLIC CHICKEN WITH CREAMY SAUCE & SPINACH
My kids eat this pretty well, and I had a friend over for dinner who just loved it! It's definitely a favorite meal for when I have company! The time is a rough estimate, I am a slow cook in a nearly microscopic kitchen with limited resources, so everything takes me longer. ;)

Steps:
- 1. Melt butter in a saucepan.
- 2. Add the flour and cook on medium for three to four minutes. It will start of clump together and the butter will separate from the lumps a bit when it is cooked enough. Do not brow. Add the garlic, salt and pepper.
- 3. Add the milk and bring to a low boil. Add the cream and continue to boil gently. Stir in the spinach dip. Grate some fresh nutmeg (about an 1/8 teaspoon) and simmer for a few minutes.
- 4. Serve on your favorite pasta. Or add your favorite grated cheese (2 or 3 cups) and mix with elbow macaroni. Top with your favorite mac and cheese topping and bake at 350 for half an hour.
- 5. You can also serve this over chicken or turkey.
Tips:
- Choose fresh spinach: Using fresh spinach with vibrant green color ensures the best flavor and texture in your sauce.
- Wilt the spinach properly: Wilting the spinach removes excess moisture, concentrates its flavor, and reduces its volume, making it easier to incorporate into the sauce.
- Use good quality cream: The cream is a key ingredient in this sauce, so it's important to use a high-quality, full-fat cream for the richest flavor and texture.
- Season to taste: Don't be afraid to adjust the seasonings in the sauce to your liking. Add more garlic, Parmesan cheese, salt, or pepper as desired.
- Serve immediately: Creamy spinach sauce is best served immediately after it's made, when it's at its freshest and most vibrant. It can lose its color and texture if it sits for too long.
Conclusion:
Creamy spinach sauce is a versatile and delicious sauce that can be used in a variety of dishes. It's a great way to add flavor and richness to pasta, chicken, fish, or vegetables. With its vibrant green color and creamy texture, it's sure to impress your taste buds. So, next time you're looking for a quick and easy sauce to elevate your meal, give creamy spinach sauce a try. You won't be disappointed!
