Time 1h15m

Yield 16 rice squares

Number Of Ingredients 8

6 tablespoons unsalted butter
16 ounces mini marshmallows
1/2 teaspoon kosher salt
6 tablespoons creamy peanut butter
2 teaspoons pure vanilla extract
6 1/2 cups crispy rice cereal
2 1/2 cups coarsely crushed graham crackers (about 9 rectangles)
1 cup milk chocolate chips

Steps:

  • Line an 8-inch square baking dish with parchment paper, allowing 1-inch wings to hang over the edges; set aside.
  • In a large pot over medium heat, melt the butter. Add the marshmallows and salt and cook, stirring, until the marshmallows are melted and smooth, 2 to 3 minutes. Remove from the heat and stir in the peanut butter and vanilla (the peanut butter can still be swirly). Add the cereal, crushed graham crackers and chocolate chips and fold with a large rubber spatula to combine.
  • Pour the mixture into the prepared baking dish, using the spatula to spread it out evenly. Place a piece of parchment on top and then use your hands to press the mixture down very firmly. Let the mixture firm up in the refrigerator for 1 hour, then cut into squares.

CHOCOLATY RICE CRISPY SQUARES

Chocolaty Rice Crispy Squares image

I love rice crispy squares but don't eat marshmallows. So I came up with these squares to satisfy my craving with a little chocolate thrown in for good measure. You can mix semi-sweet white and dark chocolate or just use the white or just the dark. It's totally up to you. You can add chocolate chips, chopped nuts, dried fruit or whatever you think would add to the taste of this recipe. Remember to keep these in the refrigerator. They need to stay cold so they don't melt and fall apart.

Tips:

  • Use short grain or sushi rice for the best results. It has a higher starch content, which helps the rice squares hold their shape.
  • Make sure the rice is cooked through before proceeding with the recipe. Undercooked rice will not bind together properly and will result in crumbly rice squares.
  • For a crispy texture, use a non-stick baking sheet and press the rice mixture down firmly before baking.
  • If you don't have a microwave, you can cook the rice in a pot on the stovetop. Just be sure to follow the package directions for cooking times and water ratios.
  • Feel free to experiment with different flavors. You can add herbs, spices, nuts, or dried fruits to the rice mixture before baking.

Conclusion:

Crispy rice squares are a delicious and versatile snack or dessert that can be enjoyed by people with and without diabetes. They are easy to make and can be customized to suit your own taste preferences. Whether you like them sweet or savory, crispy or chewy, there is a crispy rice square recipe out there for you.
