2 tablespoons olive oil
2 tablespoons unsalted butter
2 cups peeled garlic cloves (4 large heads)
5 onions, thinly sliced
2 large shallots, sliced
1 russet (baking) potato, peeled and sliced
3 tablespoons Sherry vinegar
1 tablespoon chopped fresh rosemary
6 cups chicken broth
1/2 cup heavy cream
1/2 cup well-shaken buttermilk
White pepper

Steps:

  • Melt oil and butter in a large heavy pot over moderately low heat. Add garlic and cook, stirring occasionally, until golden brown and caramelized, 10 to 12 minutes. Add onions and shallots and cook, stirring frequently, until onions are softened, about 10 minutes. Stir in potato, vinegar, and rosemary. Increase heat to high and sauté), stirring, for 2 minutes. This wasn't too big a challenge for the Betty Crocker Test Kitchen experts, who came up with the idea of caramelizing onions in a slow cooker, so all you really have to do is chop the onions and forget about them for the rest of the day. With such a flavorful base, it doesn't take much to round out the recipe: cream cheese, a little mayo, fresh herbs, a dash of soy sauce-that's really all there is to it. 8 cups thinly sliced sweet or yellow onions (about 3 lb)
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper
2 packages (8 oz each) cream cheese, softened and cubed
1 tablespoon soy sauce
1/2 cup mayonnaise
1 tablespoon chopped fresh parsley leaves
1 teaspoon chopped fresh thyme leaves
2 cans (11 oz) refrigerated Pillsbury™ Original French Bread
4 tablespoons butter, melted

It's almost impossible to overcook this, so go for the deepest brown. Use the onions and liquid to flavor soup, stock and stews. They make wonderful additions to risotto, a perfect pasta sauce, and the world's best pizza topping (first drain off the liquid).
