2 teaspoons kosher salt, plus more to taste
1 ¼ pounds Yukon Gold potatoes, peeled, cut into eighths
3 cups chicken or vegetable broth, or more as needed to adjust thickness
1 cup heavy cream
½ cup creme fraiche
1 pinch cayenne pepper

Steps:

3 leeks, (white and light green parts only, roughly chopped)
1 tablespoon olive oil
1 large carrot, (sliced)
3 celery ribs, (sliced)
3 cloves garlic, (minced)
1 teaspoon salt, (or to taste)
1/4 teaspoon fresh ground pepper, (or to taste)
6 to 7 cups low sodium vegetable broth
2 tablespoons butter
3 sprigs fresh thyme
1/2 cup heavy cream, (optional)
chopped fresh parsley, (for garnish, optional)
fresh thyme leaves, (for garnish, optional)

Steps:

  • Place chopped potatoes and leeks in the slow cooker and set aside.
  • Heat olive oil in a skillet and add carrots and celery; cook for 4 minutes.
  • Stir in garlic and cook for 20 seconds.
  • Add carrot mixture to the slow cooker.

When this was finished cooking I pureed the soup. You don't have to do this if you don't want to, but this is the way I like it.

6 potatoes (I used the ones with the thin skin)
2 leeks
2 onions
1 carrot
1 stock celery
4 cups water
1 1/2 teaspoons salt
4 chicken bouillon cubes
1 (14 1/2 ounce) can cream of mushroom soup
1 (14 1/2 ounce) can cream of celery soup
1 tablespoon parsley flakes
2 tablespoons butter
13 ounces evaporated milk
chopped chives (for garnish)

Steps:
