CRUNCHY CHEESE DIP
The combination of flavors makes this dip very interesting as well as delicious. It's a challenge to not eat a lot while you're making it. I'm usually anxious for my guests to arrive so I can serve it and dig in!

Steps:
- In a small bowl, combine the cream cheese, pecans, water chestnuts, pineapple, chives, pineapple juice, salt and pepper. Garnish with parsley. Cover and chill. Serve with crackers.

ULTIMATE CHEESE DIP
This cheese dip is easily the best that I've ever had, and being a college student I've had quite a lot. The only reason there are ever leftovers is because this dip is so delicious and filling. I recommend Mission® or On The Border® chips because this dip is rather thick and you need a durable chip that wont break off too easy!

- Heat a large skillet over medium-high heat. Cook and stir sausage, beef, and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer meat mixture to a large pot and add Cheddar cheese, tomatoes with green chile peppers, cream cheese, picante sauce, garlic powder, and cumin.
- Heat cheese mixture over medium-high heat. Gradually stir in processed cheese until cheese is melted, about 10 minutes.

CHEDDAR CHEESE DIP
Steps:
- Grate the cheddar cheese while very chilled, but then let the grated cheese get back to room temperature. In the bowl of a food processor, whirl the cheese, butter, mustard, sherry and cayenne pepper until smooth and creamy
- Transfer to a mixing bowl, cover and refrigerate until needed. (You can do 2 weeks before serving.) Remove from refrigerator 1 hour before serving; fold in the nuts and repack into four 1 cup ramekins of crocks. Dust with chives for garnish
- Serve with crackers, or a crunchy vegetable like celery or fennel or jicama.

- Preheat your oven's broiler.
- In a medium bowl, stir together the onion, tomato, celery, bell pepper, cheese, chili powder and salt. Arrange slices of bread on a baking sheet or broiling pan. Top each one with 1/4 of the mixture, spreading out to the edges.
- Broil for 4 to 5 minutes, or until cheese melts. Watch closely to prevent burning. Serve immediately.
