CORN, AVOCADO AND CUCUMBER SALAD
This straight-from-the-garden vegetable salad is the essence of summer on a plate. It's very easy to make, but you'll need to buy sweet young corn, tender enough to eat raw, as well as perfectly ripe avocados and the freshest cucumbers. Feel free to add cherry tomatoes and radishes, and sprigs of crunchy purslane, if you can find it.

TOASTED MILLET SALAD WITH CUCUMBER, AVOCADO AND LEMON
Cooked millet has a taste and aroma that's subtly reminiscent of raw hazelnuts, and as with hazelnuts, toasting millet first really deepens its flavor. If you want to work ahead, toast and cook the millet, set aside and toss in the other ingredients when ready. Sharp mint leaves, creamy avocado, crisp cucumbers and bright lemon really round out this dish, which makes a lovely side dish, an afternoon snack or the base of a protein-focused grain bowl. Millet is marvelous, but a wide variety of grains will work just as well.

Steps:
- To a small pot set over medium heat, add the millet and toast, swirling the pan constantly until the grains begin to crackle, become fragrant and deepen in color to a deep tan, about 10 minutes.
- Turn heat to low and carefully add 1 1/4 cups water, season with salt, bring to a simmer and cook, partly covered, until the millet is softened, about 15 minutes. Remove the millet from the heat, and stir in 1 tablespoon olive oil and let sit covered for at least 10 minutes. Fluff with a fork, and allow to cool to room temperature. You can do this step ahead and store the cooked millet in the refrigerator for up to 3 days. (If using other grains, toast first, then cook according to package directions.)
- While the millet cooks, make the vinaigrette: Combine the lemon zest, juice and honey in a small bowl and whisk to incorporate. Add the remaining 3 tablespoons of olive oil and whisk until emulsified. Season with salt and pepper.
- Toss the cooled millet with cucumbers, mint, almonds (if using) and half of the lemon vinaigrette; divide among bowls. Top each bowl with an avocado quarter and dress with spoonfuls of vinaigrette.

Steps:
- Cover and bring a medium saucepan of salted water to a boil. Prepare an ice-water bath. Add peas, and cook, uncovered, until tender but still bright green, about 3 minutes. Remove peas, drain, and then plunge peas into ice water to stop cooking. Drain well. Add beets to boiling water, and cook until tender, about 40 minutes. Remove from heat, drain, and then plunge beets into ice water to stop cooking. Drain well. Peel beets, and cut into 1/8-inch pieces. Transfer to a large bowl.
- In a deep container, combine chives and vinegar using an immersion blender. Add oil in a slow, steady stream, and blend until emulsified (alternately, the vinaigrette can be made in a regular blender). Season with salt and pepper. Strain mixture through a fine sieve.
- In a medium bowl, combine peas and cucumbers. Add 1/4 cup chive oil, and mix to combine. Gently toss in avocados.
- To serve, place a 9-inch ring mold on a platter. Fill with the beet mixture. Top with pea mixture, spreading evenly. Drizzle with a little of the remaining chive oil (reserve any extra for another use). Top with horseradish cream. Remove ring mold, and serve.

GRILLED TOFU WITH CHIMICHURRI SAUCE AND AVOCADO CUCUMBER SALAD
I found this recipe in in a waiting room magazine and am posting here to try later. Looking around on the internet, the sauce can also be used on steaks, chicken, pork or fish ... I think on just about anything you want. I apologize for the initial post with most of the instructions missing. I tried to put it together again without the recipe in front of me (no longer have it). Instructions may need adjustment as I haven't made it yet and can't quite remember how it went.

Steps:
- Preheat a grill or grill pan.
- Combine sauce ingredients in a small bowl. Place in an air-tight container for an hour or up to several days in advance. Remove from refrigerator 30 minutes prior to serving.
- Combine salad ingredients, gently adding the avocado last. Refrigerate until needed.
- Pat the tofu slices dry with paper towels. Slice into four pieces. Brush the tofu and bread on both sides with 2 tablespoons of olive oil and season with salt and pepper. Grill the bread over moderately high heat, turning once, until lightly charred, about 2 minutes. Grill the tofu, turning once, until grill marks form and the tofu is heated through, about 6 minutes.
- Transfer the grilled bread and tofu pieces to plates. Top with salad. Drizzle with chimichurri sauce. Serve immediately.
Tips:
- To select the best cucumber, look for one that is firm, has a deep green color, and is free of blemishes.
- Choose an avocado that is ripe but not too soft. A ripe avocado will yield to gentle pressure and will be slightly soft when squeezed.
- Use a sharp knife to cut the cucumber and avocado. This will help to prevent them from becoming bruised.
- If you are short on time, you can use pre-cut cucumber and avocado. However, fresh is always best.
- Add some chopped red onion or shallots for an extra layer of flavor.
- If you like a spicy kick, add a pinch of chili powder or cayenne pepper to the dressing.
- For a refreshing summer salad, serve the cucumber and avocado salad chilled.
Conclusion:
Cucumber and avocado salad is a light, refreshing, and healthy salad that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste. With its vibrant colors and delicious flavors, this salad is sure to be a hit at your next gathering.
