4 cups plain yogurt
1 medium cucumber, peeled, seeded and grated
1/2 teaspoon salt
1/4 cup olive oil
1/4 cup white vinegar
2 garlic cloves, minced

Steps:

  • Line a fine mesh strainer with two layers of cheesecloth. Place yogurt in strainer over a bowl. Cover and refrigerate for at least four hours or overnight., Drain and discard liquid in bowl; set yogurt aside. Place cucumber in a colander over a plate; sprinkle with salt. Let stand for 15 minutes; discard liquid. , In a small bowl, whisk oil and vinegar until blended. Stir in the garlic, yogurt and cucumber.

1 cup sugar
1 cup white vinegar
1 cup water
4 cucumbers, peeled and sliced
1 medium red onion, sliced

Steps:

  • In a large bowl mix first 3 ingredients.
  • Peel and slice cucumbers and onion and add to vinegar/water/sugar mix.
  • Cover and refrigerate for 1 hour before serving.
  • If all the cucumbers and onions are eaten reserve the vinegar/water/sugar mix and add fresh cucumbers and onion.
  • My servings are an estimate, as I can eat the whole bowl myself :) The cooking time is actually the refrigeration time.

6 tablespoons superfine sugar
1 -3 teaspoon sambal oelek (red chilies ground with salt) or 1 -3 teaspoon other chili paste
1 tablespoon finely chopped fresh coriander (cilantro)
2 tablespoons peeled and finely chopped cucumbers

Steps:

  • Combine the first three ingredients in a small pan over medium heat and heat gently until sugar is dissolved and chili paste is thoroughly mixed.
  • Remove from heat and pour into a bowl.
  • Allow mixture to cool to room temperature.
  • Stir in the coriander and the cucumber and serve immediately.
  • Or, store in a well-sealed container in the refrigerator for as long as four days.

Kosher salt
3 tsp. sherry vinegar or red wine vinegar, divided
3/4 cup blanched almonds, divided

Steps:

  • Preheat oven to 350°F. Cut cucumbers about 1" thick on a steep diagonal and place in a medium bowl. Add a large pinch of kosher salt and 2 tsp. vinegar and toss to combine; let marinate 10 minutes. Pour off any liquid that is released.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.

Garnish: a 1- by 2-inch piece toasted nori* (dried laver) from one 8- by 7 1/2-inch sheet (optional)

Steps:

  • If using bonito flakes, in a bowl stir together flakes, vinegar, and soy sauce and let stand 1 hour.
  • Peel and seed cucumbers and diagonally cut into 1/8- to 1/4-inch-thick slices. In a colander set over a bowl toss cucumbers with salt and drain 30 minutes. Rinse cucumbers well and pat dry. Pour bonito mixture through a fine sieve into a large bowl and toss liquid with cucumbers and 1 tablespoon sugar; if not using bonito flakes, toss cucumbers with vinegar, soy sauce, and 1 tablespoon sugar, or to taste. With scissors cut nori lengthwise into thin strips.
