2 cups baby carrots
1 can (20 ounces) pineapple chunks, undrained
4 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1/2 cup packed brown sugar
1 tablespoon butter

Steps:

  • In a saucepan, bring 1 in. of water to a boil; place carrots in a steamer basket over water. Cover and steam for 8-10 minutes or until crisp-tender. Drain pineapple, reserving juice; set pineapple aside., In a saucepan, combine cornstarch and cinnamon. Add the brown sugar, butter and reserved juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the carrots and pineapple; heat through.

1 (1 lb) bag baby carrots
6 tablespoons butter
2 tablespoons curry powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh lemon juice
2 tablespoons brown sugar
1 cup pecans, toasted and chopped

Steps:

  • Place the carrots in a heavy large saucepan and add cold water to cover.
  • Cook over medium high heat just until tender, about 15 minutes.
  • Drain and return to pan.
  • Mix the butter, curry powder, salt and pepper and add to the carrots.
  • Heat over very low heat, tossing to coat the carrots with the butter mixture.
  • Add the lemon juice and brown sugar.
  • Heat, tossing occasionally, until the carrots are glazed.
  • Sprinkle with chopped pecans.
  • Serve immediately.

  • Drain pineapple, reserving 1/2 cup of the juice.
  • In a large nonstick skillet, combine brown sugar, reserved pineapple juice, curry powder, and slat.

  • Heat the oven to 350°F. Spray bottom of 13x9-inch pan with nonstick cooking spray. In a large bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg and salt. Add grated carrots and toss to coat. Set aside.
