Tips:

  • Use a good quality curry powder. The curry powder is the key ingredient in this soup, so it's important to use a good quality one. Look for a curry powder that is made with fresh, flavorful spices.
  • Don't be afraid to adjust the amount of curry powder to your taste. The recipe calls for 2 tablespoons of curry powder, but you can add more or less depending on how spicy you like your soup.
  • Use a variety of vegetables. The recipe calls for cauliflower and potatoes, but you can also add other vegetables, such as carrots, celery, or peas.
  • Make sure the vegetables are cooked through. The vegetables should be tender, but not mushy. If they are not cooked through, they will not taste very good.
  • Serve the soup with a dollop of yogurt or sour cream. This will add a creamy richness to the soup.
