Time 25m

Number Of Ingredients 7

6 eggs (room temperature)
1/3 cup mayonnaise (or more for extra creaminess)
1/2 cup grated carrot (from one small carrot)
1 green onion (sliced)
1 teaspoon curry powder
salt and pepper (to taste)
2 tbs chopped parsley (for garnish)

Steps:

  • Bring a pot of water to a boil. Then turn the heat to low so there's no bubbles. Use a skimmer to slowly and gently place the eggs in the pot. Turn the heat back to high and boil the eggs for 12-14 minutes.
  • Transfer the eggs to an ice water bath for a few minutes to stop the cooking process and cool.
  • Once your eggs are cool to touch, peel and discard the eggs shells.
  • Cut the hard boiled eggs to your desired size (I prefer chunky).
  • Add the eggs, mayonnaise, grated carrots, green onion, curry powder, salt and pepper to bowl and stir all ingredients together. Sprinkle with parsley.
  • Serve on its own or in a wrap or sandwich and enjoy!

Time 30m

Yield 4 serving(s)

Number Of Ingredients 13

6 large eggs
1 tablespoon olive oil
1 large onion, diced
1 cup frozen peas, thawed
3/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1 lemon
1/4 cup light mayonnaise
1/2 teaspoon curry powder
2 stalks celery, sliced
1/4 cup loosely packed fresh parsley leaves, chopped
1 (5 -6 ounce) bag mixed baby greens
1/2 cup walnuts, toasted and chopped (I use pecans too)

Steps:

  • Hard cook eggs: Place eggs in 3-quart saucepan with enough water to cover by 1 inch. Heat water, just to boiling, on high; remove from heat. Cover saucepan and let eggs stand 15 minutes.
  • While eggs are cooking, in 12-inch nonstick skillet, heat oil on medium 1 minute. Add onion and cook about 20 minutes or until very tender and golden-brown, stirring occasionally. Stir in peas, 3/4 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper; cook 3 minutes longer, until peas are cooked. Remove skillet from heat.
  • When eggs are done, carefully pour off water and cool eggs in same pan in cold water, changing water occasionally, until eggs are easy to handle, about 5 minutes.
  • Meanwhile, from lemon, grate 1 teaspoon peel and squeeze 2 tablespoons juice. In large bowl, stir lemon peel and juice with mayonnaise and curry powder.
  • Remove shells from hard-cooked eggs. Coarsely chop eggs and place in large bowl.
  • To bowl with eggs, add onion mixture, mayonnaise mixture, celery, and parsley; stir gently with rubber spatula to combine. If you like, cover and refrigerate egg salad 1 hour or until chilled.
  • To serve, place greens on 4 dinner plates; top with egg salad and sprinkle with chopped walnuts.

CURRIED EGG SALAD

Curried Egg Salad image

I was looking around for a curried egg salad recipe and couldn't find one that I liked...so I made my own! The addition of the sriracha sauce and green onion gives it a distinctly "ethnic" flavor and is a nice variation from your typical, boring egg salad. This is my new favorite recipe! Would be delicious made into little sliders for a brunch. I rarely/never measure, so this is my best estimation of amounts.

Yield Makes 4 servings

Number Of Ingredients 10

1/3 cup mayonnaise
1 tablespoon fresh lime juice
1 1/2 teaspoons curry powder
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon cayenne
6 hard-boiled large eggs, chopped
1 cup diced (1/4-inch) Granny Smith apple (from 1 apple)
1/3 cup finely chopped red onion
1/4 cup chopped fresh cilantro

Steps:

  • Whisk together mayonnaise, lime juice, curry powder, mustard, salt, and cayenne in a bowl until combined. Add eggs, apple, onion, and cilantro and stir to combine.

Tips:

  • Use fresh ingredients: Fresh herbs, vegetables, and spices will give your egg salad the best flavor.
  • Hard-boil your eggs perfectly: Overcooked eggs will be dry and crumbly, so be careful not to boil them for too long. For a medium-boiled egg, boil for 10-12 minutes. For a hard-boiled egg, boil for 15-18 minutes.
  • Mash your eggs gently: Don't over-mash your eggs, or they will become too dry. Use a fork or potato masher to gently break up the eggs.
  • Add your favorite mix-ins: The possibilities are endless when it comes to mix-ins for egg salad. Some popular choices include celery, onion, pickles, and grapes. You can also add herbs like parsley, dill, or chives.
  • Season your egg salad to taste: Be sure to taste your egg salad before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or curry powder.
  • Serve your egg salad on a bed of greens: This is a great way to add some extra nutrients and fiber to your meal. You can also serve egg salad on sandwiches, crackers, or toast.

Conclusion:

Curried egg salad is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover hard-boiled eggs. So next time you're looking for a quick and easy meal, give curried egg salad a try. You won't be disappointed!
