Tips:

  • Choose the right cut of pork: Pork shoulder, pork loin, and pork tenderloin are all good choices for this dish. Pork shoulder is the most flavorful, but it also takes longer to cook. Pork loin is leaner and cooks more quickly, while pork tenderloin is the most tender but also the most expensive.
  • Brown the pork before cooking: Browning the pork helps to develop its flavor and create a nice crust. You can brown the pork in a skillet over medium-high heat or in a Dutch oven over medium heat.
  • Use a variety of fruits: This dish is a great way to use up any leftover fruit you have on hand. Apples, pears, peaches, and apricots are all good choices. You can also use dried fruits, such as raisins, cranberries, or cherries.
  • Add some spices: Curry powder is the main spice in this dish, but you can also add other spices, such as cumin, coriander, and ginger. The amount of spices you add will depend on your personal preference.
  • Cook the dish until the pork is tender: The pork should be cooked until it is tender and easily pierced with a fork. The cooking time will vary depending on the cut of pork you use.
