Yield 4

Number Of Ingredients 8

3 c. uncooked large elbow macaroni noodles
2 tbsp. butter
1 1/2 tbsp. olive oil
2 tbsp. flour
1 1/4 c. fat-free milk
1 1/2 c. shredded medium Cheddar cheese
1 c. shredded Monterey Jack cheese
3/4 c. shredded Parmesan cheese

Steps:

  • Boil macaroni noodles until tender (not al dente). Rinse cooked noodles with cold water. Set aside.
  • In a heavy skillet, melt butter and olive oil over medium heat. Add flour to make a roux (see Tips & Techniques below).
  • Lower temperature to medium-low and stir mixture continuously until golden, nutty, and smooth. Be careful not to scorch.
  • Add fat-free milk slowly while stirring. Add 1 cup shredded cheddar and keep stirring. Do not allow the mixture to boil or your cheese sauce will "break." Add 3/4 cup shredded Monterey Jack cheese and keep stirring. Sauce will be thickened and smooth.
  • Turn off the heat on the stove, and turn on your broiler.
  • Add cooked macaroni noodles to cheese sauce and fold to coat noodles. Incorporate 1/2 cup shredded Parmesan cheese into cheese sauce coated noodles. Top with remaining shredded cheese. Stop here for a "stove top" style, or continue to next step if you prefer a baked style.
  • Broil until top is golden brown and crispy.

MAC AND CHEESE WAFFLES WITH BACON

Mac and Cheese Waffles with Bacon image

Who doesn't love a waffle, more importantly, a savory waffle? I created this recipe during some late-night thinking, as I do with most recipes that I make. I thought about two things that my wife loves: waffles and a little spicy mac and cheese, so I wondered, "Why not smash them together?" Happy wife, happy life, as they say. These waffles will satisfy at all hours of the day for your partner, friend, family member or even if you're on your own -- but a warning: You'll want to eat more than one!

Time 1h30m

Yield 6 to 8 waffles

Number Of Ingredients 10

Kosher salt
12 ounces sliced bacon, diced
1 stick unsalted butter
1/2 cup all-purpose flour
4 cups whole milk
3 cups shredded sharp yellow Cheddar (about 12 ounces)
2 cups shredded pepper jack (about 8 ounces)
1/2 cup grated Parmesan
1 pound elbow pasta
Nonstick cooking spray

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, cook the bacon in a large skillet over medium heat, stirring occasionally, until crispy, 7 to 8 minutes. Remove with a slotted spoon to a paper towel-lined plate. Pour bacon fat into a heatproof container (save for another use) and wipe the skillet clean with paper towels.
  • Melt the butter in the large skillet over medium heat. Add the flour and whisk until tan in color, about 1 minute. Add the milk and bring up to a simmer, whisking every couple of minutes, until thick enough to coat the back of a spoon. Add the three cheeses in batches, whisking after each addition, until melted. Remove from the heat.
  • Add the pasta to the boiling water and cook according to the package directions until al dente, then drain. Transfer to a large bowl, add 3/4 of the cheese sauce and 3/4 of the cooked bacon and stir to combine. Pour onto a rimmed baking sheet, spread it to the edges and refrigerate for 1 hour. Reserve the remaining cheese sauce for serving.
  • Preheat your waffle iron to medium high. Spray with nonstick cooking spray and add enough mac and cheese to cover most of the iron. Press down hard to squeeze the waffle iron shut (don't worry if some mac and cheese falls out). Cook until golden brown, about 4 to 6 minutes.
  • Meanwhile, reheat the reserved cheese sauce over low heat. Plate the waffle with a side of cheese sauce and garnish with some of the remaining bacon. Repeat with the remaining mac and cheese.

MAC-DADDY MAC AND CHEESE

Mac-Daddy Mac and Cheese image

This is an adaptation of a recipe that Guy Fieri showed on the show "Guy Off the Hook". We have made it a few times now and each time we are amazed at just how delicious this turns out. But, lets face it, how can you turn down the trifecta of Cheese, Bacon and Heavy Cream?

Provided by Lord Bezoar

Categories     One Dish Meal

Time 1h20m

Yield 1 9x13 pan of great mac and cheese, 6-10 serving(s)

Number Of Ingredients 14

2 shallots, peeled
3 garlic cloves, peeled
1 teaspoon olive oil
3 pieces bacon, diced, cooked, reserving 1 tablespoon bacon fat
2 tablespoons flour
4 cups heavy cream
2 -4 sprigs fresh thyme
1/2 lb monterey jack pepper cheese, shredded
1/2 lb sharp cheddar cheese, shredded
salt & freshly ground black pepper
1 lb rotini pasta, cooked
1/2 cup panko breadcrumbs
2 tablespoons olive oil
2 -4 sprigs fresh parsley, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Make a little open topped pouch of aluminum foil and place the shallots and garlic in there with a pinch of salt and a bit of olive oil.
  • Roast this for 30-45 min or until tender and just starting to brown.
  • While that is roasting, place the Thyme in a 2 quart saucepan and pour the Heavy Cream on top of it. Place over Medium heat. **Make sure this does not boil, we only want to get it nice and hot.
  • Once the garlic and shallots are done, chop them up and set aside.
  • Reheat the bacon fat in a large saute pan and add the garlic and shallots.
  • Saute for 1 Minute.
  • Add Flour and stir for 1 minute.
  • Grab the Thyme with a pair of tongs and throw it away. Then, pour the hot cream into your large saute pan.
  • Reduce this mixture by about 1/3.
  • Now, stir in your cheeses until the sauce is thick and creamy.
  • Season to taste with Salt and Pepper.
  • Remove from heat and stir in the Pasta.
  • Pour the mixture into a 9x13 baking dish and sprinkle the Bacon, Parsley and Panko over the top.
  • Drizzle the remaining olive oil over the top of everything and bake uncovered until lightly browned and bubbly (about 20-25 min).

Tips:

  • Use high-quality cheese. The better the cheese, the better the mac and cheese will be. Use a combination of sharp cheddar, Gruyère, and Parmesan for the best flavor.
  • Cook the pasta al dente. This means that the pasta should be cooked through but still have a slight bite to it. Overcooked pasta will make the mac and cheese mushy.
  • Make a roux. A roux is a mixture of butter and flour that is used to thicken the sauce. A roux will help to make the mac and cheese creamy and smooth.
  • Use milk and cream. Milk and cream add richness and flavor to the mac and cheese. You can use whole milk, 2%, or skim milk. If you use skim milk, you may want to add a little bit of butter to give it more flavor.
  • Season the mac and cheese to taste. Add salt, pepper, and garlic powder to taste. You can also add other spices, such as paprika, cayenne pepper, or onion powder.
  • Top the mac and cheese with breadcrumbs or grated Parmesan cheese. This will give the mac and cheese a crispy topping.
  • Bake the mac and cheese until it is bubbly and golden brown. This will take about 30 minutes.

Conclusion:

Mac and cheese is a classic comfort food that is loved by people of all ages. It is a simple dish to make, but there are a few tips that you can follow to make sure that your mac and cheese turns out perfect. With the right ingredients and a little bit of effort, you can make a mac and cheese that is creamy, cheesy, and delicious.
