3 cups brown sugar, packed
1 teaspoon vanilla
2 cups sifted all-purpose flour
1 teaspoon baking powder

1 cup angel flake coconut
2 cups quick-cooking rolled oats (not instant)

Steps:

  • Grease cookie tins.
  • Preheat oven to 375°F (190°C).
  • Beat butter, eggs, sugar and vanilla together until they are light and fluffy.

1 ½ cups all-purpose flour
1 teaspoon baking soda
¾ teaspoon salt
1 cup white sugar
1 cup brown sugar
1 ½ cups rolled oats
½ cup flaked coconut
¾ cup vegetable oil
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.

1 cup butter
1 cup brown sugar
1 cup white sugar
2 large eggs, beaten
1 teaspoon vanilla
1 teaspoon salt
3 cups oatmeal

1 to 2 dozen Dad's coconut cookies crushed.
1/4 cup melted butter
3 squares chocolate ( 2 semi sweet and 1 unsweetened)
1/2 cup butter
1 1/2 cus icing sugar
1 egg
1 tsp vanilla
1/2 cup chopped walnuts

  • Mix crushed cookies and butter together. Line pan with parchment paper. Press 2/3 of the mixture into pan. Bake for 10 min in a 350 oven. Put chocolate and butter in a double boiler to melt. Add icing sugra, eggs , vanilla. Beat until fluffy. Add walnuts. Put on top of hot crumbs and sprinkle rest of crumbs on top. Press down gently. Place in fridge to cool.

3/4 teaspoon poppy seeds
1 stick unsalted butter, softened
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract

  • Whisk together flour, baking powder, and salt. Stir in seeds.

2 cups molasses
½ cup butter
½ cup vegetable oil
2 teaspoons ground ginger
4 cups all-purpose flour
