1/2 cup sugar
1/4 cup orange juice
2 tablespoons lemon juice
1 egg yolk, lightly beaten
1-1/2 teaspoons lime juice
1/2 fresh pineapple, peeled and cubed
1 small cantaloupe, peeled, seeded and cubed
1 large grapefruit, peeled and sectioned
1 large navel orange, peeled and sectioned
1 small red apple, chopped
1 small banana, sliced
1 cup fresh blueberries

Steps:

  • In a small heavy saucepan, combine the first five ingredients. Cook and stir over medium heat until mixture reaches 160° and is thick enough to coat the back of a spoon., Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. , In a large bowl, combine the pineapple, cantaloupe, grapefruit, oranges, apple and banana. Pour dressing over fruit. Zest and juice of 1 orange
1 vanilla bean
4 pints strawberries, hulled and halved
2 pints blueberries
2 cups green grapes, halved
2 cups red grapes, halved
Fresh mint leaves

  • Place the sugar, 1 cup water, orange zest, juice and vanilla bean in a small pan and stir to dissolve the sugar. Then bring to a boil. Turn the heat to low and simmer for about 15 minutes to thicken. Set aside to cool.

1 3/4 cup(s) reserved pineapple juice
2 - eggs, beaten
1 tablespoon(s) lemon juice
1 package(s) 16 oz acini di pepe pasta
3 can(s) 11 oz each mandarin oranges, drained
2 can(s) 20oz each pineapple chunks, drained
1 can(s) 20oz crushed pineapple, drained
1 cup(s) miniature marshmallows
1 cup(s) coconut
12 ounce(s) container of cool whip

Steps:

  • In a small sauce pan, combine the sugar, flour and salt. Gradually stir in pineapple juice. Bring to a boil, stirring constantly. Stir a small amount of hot mixture into eggs; return all to the pan; stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. remove from the heat. Gently stir in lemon juice.

My Sister got this recipe in high school home ec class in the 60's. I have adapted it to make enough for our family. The original recipe was called 5 cup salad. Mine turns into a 10 cup salad. I find you still only need one block of creamed cheese, even when you double or triple all the other ingredients. It is served every Thanksgiving at our house and is loved by all of us. It's best if made 6-8 hrs ahead so it can chill thoroughly and the flavors can marry. This is a borrowed pic but it looks just the same.

1 - 8oz package(s) philly creamed cheese, softened
2 large cans pineapple tidbits, drained well
3 medium cans mandarin orange segments, drained well
3 cup(s) mini marshmallows
2 cup(s) coconut, flaked

  • 1/2 hour before you start making the salad, open and drain the pineapple and oranges in a strainer separately. Let drain for 30 minutes to get all excess juice out. (I use the juice in the punch we make every holiday)
  • In a large bowl thoroughly cream the creamed cheese. Add pineapple, coconut, and marshmallows. Stir together then gently stir in oranges so they don't break up (like they did in my pic). Cover with plastic wrap and refrigerate until serving time. Enjoy!

1 (11 ounce) can mandarin oranges (drain well)
1 (8 ounce) can crushed pineapple (drain well)
2 cups miniature marshmallows
1 cup sweetened flaked coconut
1 cup sour cream

Steps:

  • In a large bowl, combine the oranges, pineapple, marshmallows, coconut, and sour cream.
  • Stir until completely mixed together.
  • You can eat it immediately after mixing, but we recommend that you refrigerate for at least 2-3 hours before serving so that the sour cream can be sweetened by the fruit.
  • Try these other variations: add in chopped walnuts or pecans for an added crunch; to make it sweeter, stir in a little powdered sugar - it will also offset the tartness from the sour cream; add in a small jar of maraschino cherries; add in a can of drained fruit cocktail; add in dried cranberries and a dash of cinnamon; stir in 2 Tablespoons of instant lemon pudding powder for a lemon-taste; use pina colada flavored yogurt in place of the sour cream; top with corn flakes for an added crunch; add diced apples (if you don't like coconut, apples are a great alternative because of the crunch); add grapes (red or green) that have been halved; add diced bananas; add some marshmallow creme in with the sour cream to sweeten it up.
