Very good and easy to make. We serve this with 2 vegetables. Add some garlic powder and season salt to the creamy sauce for a good kick. Also, I butterfly each breast to evenly and quickly cook the chicken.

1/2 cup all-purpose flour
1/4 cup dry breadcrumbs
2 egg whites, lightly beaten
2 tablespoons water
4 boneless skinless chicken breast halves
2 tablespoons vegetable oil
2 tablespoons margarine or 2 tablespoons butter
1 tablespoon all-purpose flour
1 cup milk
1/2 cup cheddar cheese, divided
paprika (to garnish)

Steps:

  • Preheat oven to 350F.
  • On a sheet of waxed paper, combine the flour and bread crumbs.

4 tablespoons parmesan cheese, divided
4 tablespoons butter or 4 tablespoons margarine, divided
1 cup milk
1 teaspoon Worcestershire sauce
3/4 cup cheddar cheese, grated

Steps:

  • Preheat the oven to 350 degrees.
  • Flatten chicken breasts between wax paper.
  • Combine egg yolks and water.

2 chicken breasts
1/4 cup cilantro leaf
1/2 small onion, for serving
1/2 medium onion, chopped (for chicken mix)
1 bay leaf
8 peppercorns
3 tablespoons grated parmesan cheese
4 ounces monterey jack cheese, shredded
4 ounces cheddar cheese, shredded
1 (4 ounce) can green chilies
1 (13 ounce) can tomatillos
1 3/4 cups canned tomatoes, drained
3/4 cup whipping cream
1 egg
1 cup guacamole, for serving
1/4 cup vegetable oil
8 corn tortillas
1 cup sour cream
shredded lettuce
water
salt

Steps:

  • Place chicken breasts in large pot, add water to cover add bay leaf, peppercorns and salt to taste. Cover and simmer for 45 minutes or until tender. Cool and drain. Shred chicken and mix with chopped onion Parmesan cheese and Monterey Jack and set aside.
