3 cups yellow onions, chopped
1 lb lean ground turkey (or lean turkey sausage)
2 tablespoons chili powder
1 tablespoon fresh oregano, chopped or 1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground mustard
2 tablespoons garlic, chopped
1 1/2 cups pinto beans, cooked or 1 (15 ounce) can pinto beans, rinsed and drained
1 1/2 cups black beans, cooked or 1 (15 ounce) can black beans, rinsed and drained
3 cups diced tomatoes or 1 (28 ounce) can roasted diced tomatoes, undrained
1 cup fat free chicken broth
1/2 cup black olives
1/2 cup green onions or 1/2 cup fresh cilantro, chopped

Steps:

  • Spray a large saucepan or Dutch oven with a few sprays of cooking oil spray. Add onion and saute over medium-high heat until soft and just starting to brown. Add ground turkey or sausage;cook over medium high heat, breaking upmeat with a spoon, until cooked through, about 6 minutes. Add chili powder, oregano, cumin, mustard, garlic, beans, tomatoes, and broth. Bring to a boil over high heat and then reduce the heat to a simmer. Cover and let simmer for 20 minutes.
  • Garnish with olives and green onions or cilantro and serve immediatly.

5 pounds coarse ground beef
3/4 cup chili powder
1/4 cup cayenne pepper
1/4 cup ground cumin
1/4 cup salt
1/4 cup sugar
32 ounces tomato paste
10 cloves garlic, minced
2 12-ounce cans tomato sauce
1 128-ounce can pinto beans in chili sauce
1 10-ounce can beef broth
1 large yellow onion, diced
1 large green bell pepper, diced
Tamales, for serving

Steps:

  • Into a large pot set over medium heat, add the ground beef and cover with water. Bring to a simmer and cook just until the meat is cooked through, 20 to 25 minutes, stirring occasionally.
  • Strain the beef and then add back into the pot. Add the chili powder, cayenne, cumin, salt, sugar, tomato paste, garlic, tomato sauce, pinto beans, broth, onions and peppers and mix until well combined and thick. Add 2 cups water to the pot to thin slightly and simmer for 1 hour 30 minutes.
  • To serve, spoon some chili on top of beef tamales or use as a side dish.

12 ounces tomato paste
1 yellow onion, grated
2 tablespoons chili powder
2 tablespoons cocoa powder
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon garlic salt
1/2 teaspoon ground allspice
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cloves
2 bay leaves
2 pounds ground beef (I use chuck)
1 tablespoon white wine vinegar
1 pound spaghetti, cooked according to package directions and tossed in olive oil to prevent sticking
One 15-ounce can kidney beans, drained
1 white onion, diced
Two 8-ounce blocks Cheddar, grated
Hot sauce, optional
Oyster crackers, for serving

Steps:

  • For the chili: In a stockpot or Dutch oven, combine the tomato sauce, tomato paste, onions, chili powder, cocoa powder, sugar, kosher salt, cinnamon, cumin, garlic salt, allspice, pepper, cayenne, cloves, bay leaves, beef (do not brown first) and 2 cups water. Mix until combined. Cover and simmer over medium-low heat for approximately 2 hours. Stir in the vinegar and simmer for another 30 minutes.
  • To serve: Serve on a bed of spaghetti and top with the beans, onions and a mound of cheese (or any preferred combination). Add hot sauce, if desired, and eat with oyster crackers.

1 pound ground beef
1 garlic clove, minced
1 cup tomato juice
1 can (6 ounces) tomato paste
2 tablespoons chili powder
1 teaspoon hot pepper sauce
1 teaspoon salt
1/4 teaspoon pepper
8 hot dogs
8 hot dog buns, split
Chopped onion and shredded cheddar cheese, optional

Steps:

  • In a large skillet, cook beef and garlic over medium heat until meat is no longer pink; drain. Stir in the tomato juice, tomato paste, chili powder, pepper sauce, salt and pepper. 1 large onion, diced
2 medium poblano peppers, diced
1 medium orange bell pepper, diced

4 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon white sugar
