These cookies are great just from the oven, but even more amazing you can freeze them after baking and when you thaw them out they will be just as chewy and good as they were when they were fresh. Recipe is easily halved or doubled. Yummy!

1 cup margarine
1 cup butter
2 cups light brown sugar
2 cups white sugar
4 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder

4 cups rolled oats
2 cups semisweet chocolate chips
1 cup candy-coated chocolate pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a very large bowl, cream together the margarine, butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, baking soda, baking powder, salt and rolled oats; stir into the sugar mixture. Mix in chocolate chips and candy-coated chocolate pieces. Drop by tablespoonfuls onto the prepared cookie sheets.

The result is a light and airy cookie that's crisp, packed with flavor, and addicting! It's hard to stop at one. You can switch out the semi-sweet chocolate with your favorite chocolate flavor or just leave the chocolate off altogether. Don't be fooled by the small amount of chocolate because this cookie packs a lot of flavor. These are super easy to make.

½ cup butter, softened
½ cup shortening
¾ cup white sugar
1 teaspoon almond extract
1 teaspoon vanilla extract
¼ teaspoon salt
2 ¼ cups all-purpose flour
1 cup sweetened flaked coconut
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Beat butter, shortening, and sugar in a bowl until creamy. Mix almond and vanilla extracts and salt into creamed mixture. Gradually beat in flour until smooth. Stir coconut into dough.

1/3 cup sugar
2/3 cup ground almonds (use spice grinder to grind into powder form)
1 2/3 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup powdered sugar

Steps:

  • Heat oven to 325°F.
  • In large bowl, beat butter, sugar and ground almonds with electric mixer on medium speed until smooth. In another bowl, stir together flour and salt. With electric mixer on low speed, add flour mixture to butter mixture.
  • Shape dough into tablespoon-size balls. Place on ungreased cookie sheets.

The same day I found out that ZWT3 would be going to Scandinavia my friend Donna served these at Bible study. The are a thin, rich sugar cookie. The Swedish vanilla sugar is an unusual ingredient that may take some hunting to find. Lyle's golden syrup is available at many grocers.

2 cups butter (no subs)
2 cups sugar
1/4 cup golden syrup, Lyle's
1/4 cup swedish vanilla sugar (vanillin socker, see note)
2 tablespoons baking soda
4 cups flour

Steps:

  • Preheat oven to 325 degrees.
  • Beat butter, sugar & syrup until fluffy.
  • Mix in vanillan socker, soda & flour.
  • Dough will be stiff but that makes rolling it easier.
  • Roll into long rope (diameter about size of nickel) and the length of the cookie sheet.
  • Bake 15 minutes. After removing from oven, drop pan onto counter to flatten.
  • Slice into 1 inch "bars" while warm.
  • These are very thin cookies and this recipe makes a lot of cookies.

1 cup sugar (or packed brown sugar)
1 egg
1 teaspoon vanilla (I add double)
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 pinch salt
2 cups icing sugar
3 tablespoons milk (or water)
food coloring

Steps:

  • Beat butter until fluffy, beat in sugar in 3 additions.
  • Beat in egg and vanilla.
  • In separate bowl mix flour, baking powder and salt; beat into butter mixture in 3 additions.
  • Divide dough in 2 equal portions and shape into discs. Wrap in plastic wrap and place in fridge for 1 hour.
  • Preheat oven to 375°F.
  • On lightly floured surface roll out dough to 1/4 inch thickness, cut into shapes.
  • Place cookies 1 inch apart on baking sheets, greased or lined with parchment paper (I spray mine with PAM).
  • Bake until light golden for about 10 minutes. Depending on your oven you may have to turn pans halfway through.
