CHEF JOHN'S CHOCOLATE DECADENCE

Chef John's Chocolate Decadence image

This 'flourless' chocolate cake was all the rage in the 1980s. As I vaguely remember, the decade celebrated decadent overindulgence and this dessert is that and more. By modern standards, this cake is ridiculously rich. In fact, some of you may find it too intense, but most true chocolate fiends will be in heaven. Serve with ice-cold fresh raspberry sauce.

  • Cool and then ice.
  • Icing: Bring sugar and cream to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Stir occasinaly to stop cream from boiling over.
  • Remove from heat.
  • Finely chop or grate the chocolate.
  • Sir into the cream until completely melted.
  • Stir in butter and vanilla.
  • Once butter is melted, refrigerate icing until cold.
  • Once cold beat the icing with an electric mixer or a wooden spoon until thick and of a good spreading consistency.

Tips:

  • Mise en place: Before you start baking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid any scrambling.
  • Use high-quality ingredients: The better the ingredients, the better your cake will taste. Use real butter, cocoa powder, and chocolate chips.
  • Don't overmix the batter: Overmixing can make the cake tough. Mix just until the ingredients are combined and no more.
  • Bake the cake at the right temperature: The cake should be baked at 350 degrees Fahrenheit. If the oven is too hot, the cake will brown too quickly and the inside will be undercooked. If the oven is too cool, the cake will take too long to bake and will be dry.
  • Let the cake cool completely before frosting it: This will help the frosting set properly and prevent it from sliding off the cake.

Conclusion:

This double decadence chocolate cake is a rich and delicious treat that is perfect for any occasion. The cake is moist and fluffy, with a deep chocolate flavor. The shiny chocolate icing is the perfect finishing touch, and it makes the cake look as good as it tastes. If you are looking for a special chocolate cake recipe, this is the one for you.
