1 carton (8 ounces) frozen whipped topping, thawed
1/4 cup milk chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, finely crush 24 of the cookies; stir in melted butter. Press onto the bottom of an ungreased 9-in. square baking pan. ⅔ cup confectioners' sugar
1 cup butter, softened
3 cups white sugar
1 ½ teaspoons salt
½ cup all-purpose flour
4 eggs, beaten
4 ½ cups chopped fresh rhubarb

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, mix together 2 cups of flour, confectioners' sugar and butter until it forms a dough, or at least the butter is in small crumbs. Press into the bottom of a 9x13 inch baking dish.
  • Bake for 10 minutes in the preheated oven. While this bakes, whisk together the white sugar, salt, flour and eggs in a large bowl. Stir in rhubarb to coat. Spread evenly over the baked crust when it comes out of the oven.

1 cup semisweet chocolate chips
2 cups sweetened flaked coconut
1 3/4 cups plus 2 tablespoons sweetened condensed milk
3 cups graham cracker crumbs (from about 20 crackers)
3/4 cup unsalted butter, melted
1/4 teaspoon coarse salt

Steps:

  • Preheat oven to 350 degrees with a rack in the center of oven. Butter a 9-by-13-inch baking pan and line with parchment paper; set aside.
  • To make the crust: In a medium bowl, mix together graham cracker crumbs, melted butter, and salt. Pour mixture into prepared pan and press into bottom of pan using your fingertips.
  • To make the topping: In another medium bowl, mix together chocolate chips and coconut; sprinkle evenly over crust.
  • Pour condensed milk evenly over coconut and chips, covering the entire surface. Transfer to oven and bake, rotating pan halfway through baking, making sure the milk does not get too brown or bubble over in the pan, 26 to 32 minutes.
  • Transfer baking pan to a wire rack to cool completely. Cut into 20 squares. Serve immediately, or wrap each bar tightly with plastic wrap and keep refrigerated until ready to serve.

1 1/2 cups flour
1 cup light brown sugar
1 cup coarsely chopped toasted pecans
6 tablespoons unsalted butter at room temperature
3 eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups unsweetened coconut flakes
1 (14-ounce) can sweetened condensed milk

Steps:

  • Line a 9 by 13-inch baking pan with foil so that it covers the bottom and overhangs 2 sides by at least 1-inch. Tuck the overlap around the outside of the pan. Coat with nonstick vegetable spray.
  • Set a rack in the middle of the oven and preheat to 350 degrees F.
  • In a bowl, combine 1 cup of the flour, 1/2 cup of the brown sugar, and the pecans. Work in the butter, rubbing and pinching it between your fingertips, until the mixture looks mealy and lumpy. Lightly pat the streusel onto the bottom of the pan.
  • In a mixing bowl, beat together the eggs and the remaining 1/2 cup brown sugar until doubled in volume. Beat in the vanilla extract.
  • In another bowl, sift together the remaining 1/2 cup flour, baking powder, and salt, then beat into the egg mixture. Spread on top of the streusel.

2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
1 container (8 oz) frozen whipped topping, thawed

Steps:

  • Heat oven to 350°F. Lightly spray bottom and sides of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, oil and egg until soft dough forms. On ungreased cookie sheet, drop 3 tablespoonfuls of dough 2 inches apart to make 3 cookies. Bake 12 to 13 minutes or until set. Cool 2 minutes; remove from cookie sheet to wire rack. 1/2 cup softened butter or 1/2 cup margarine
3/4 cup sugar
1 teaspoon vanilla extract
2 large eggs
3/4 cup flour

1/4 teaspoon baking powder
1/8 teaspoon salt (it calls for a pinch)
1/2 cup chopped walnuts or 1/2 cup pecans
2 cups miniature marshmallows
1 cup semi-sweet chocolate chips
1 cup peanut butter
2 cups Rice Krispies

Steps:

  • BOTTOM LAYER.
  • In mixing bowl cream butter or margarine with sugar until light and fluffy.
  • Add vanilla and eggs one at a time beating well after each addition.

This is a recipe I have had for about thirty years. It has stood the test of time and is as good today as it was then.

⅓ cup butter
1 cup all-purpose flour
2 tablespoons white sugar
2 eggs, beaten
½ cup packed brown sugar
¾ cup flaked coconut
½ cup chopped walnuts
¼ teaspoon salt
¼ teaspoon baking powder
½ teaspoon vanilla extract
2 teaspoons lemon zest
2 tablespoons lemon juice
1 cup sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees).
  • In a medium bowl, stir together the 2 tablespoons of sugar with the 1 cup of flour. Cut in the 1/3 cup of butter until mixture is coarse crumbs. Press firmly into the bottom of a 9x9 inch baking pan. Bake for 10 to 15 minutes in the preheated oven. Set aside to cool.
  • In the same bowl, stir together the sugar, salt, and baking powder. Add the eggs and vanilla, mix well. Stir in the coconut and chopped nuts until everything is coated. Spread the mixture evenly over the baked crust. Return to the oven to bake for an additional 25 to 30 minutes.
  • To make the icing, combine the lemon zest, lemon juice and confectioners' sugar. Beat until smooth. Pour and spread over the top of the bars as soon as they come out of the oven. Cool for 15 minutes before cutting into bars.

1 cup butter
1 cup white sugar
2 cups all-purpose flour
1 egg
⅔ cup raspberry preserves
¼ cup melted butter
2 eggs
1 ½ cups flaked coconut
1 teaspoon white sugar

Steps:

  • Cream butter and sugar. Add egg and mix. Add flour and blend well. Pat into a 13 x 9 inch pan.
  • Spread preserves evenly over the top. Combine remaining ingredients to make the topping.
  • Spread evenly over the preserves. Bake 25 minutes in a 350 degree F(175 degrees C) oven. Cool pan completely on a rack and cut into bars.

I love rhubarb and this is my favorite way to fix it. I have to make this when I have company over or I will eat the whole thing myself:)...so, so good.

2 cups flour
3/4 cup powdered sugar
1 cup butter or 1 cup margarine
4 large eggs
2 cups sugar
1/2 cup flour
1/2 teaspoon salt
4 cups thinly sliced rhubarb

Steps:

  • In food processor, mix together the crust ingredients.
  • Press into a 15 x 10-inch pan.
  • Bake at 350° for 15 minutes (crust will be very light colored).
  • Meanwhile, combine eggs, sugar, flour and salt; beat together.
  • Fold in rhubarb.
  • Spread filling mixture on hot crust; return to oven to bake 40-45 minutes longer.
  • Cool; cut into bars.

For chocolate chip cookie dough
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter, melted and cooled slightly
3/4 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
3/4 teaspoon vanilla
1 1/4 cups semisweet chocolate chips (8 ounces)

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Grease a 13- by 9- by 2-inch baking pan and line bottom and sides with wax paper, then butter paper.
  • Spread brownie batter evenly in pan.
  • Make chocolate chip dough:
  • Whisk together flour, baking soda, and salt in a small bowl.
  • Beat together butter and sugars in a large bowl with an electric mixer at high speed until pale and fluffy, 2 to 3 minutes. Lightly beat 1 egg with a fork in a small bowl and add 1 3/4 tablespoons of it plus remaining whole egg to butter mixture, beating with mixer until creamy. Beat in vanilla. Reduce speed to low and mix in flour mixture until just blended, then stir in chips.
  • Top brownie batter evenly with spoonfuls of cookie dough, spreading gently with back of spoon to form an even layer.
  • Bake until a wooden pick or skewer inserted in center comes out with moist crumbs adhering, about 1 1/4 hours. Cool completely in pan on a rack, about 2 hours. Invert onto a cutting board, remove paper, and cut into bars.

2 cups flour
1 cup butter, softened
1/2 cup powdered sugar
4 eggs
6 tablespoons lemon juice (fresh or bottled)
1 lemon, juice and zest of
6 tablespoons flour
2 cups granulated sugar
1 teaspoon baking powder
2 cups finely shredded coconut
1/2 cup butter, softened
2 tablespoons lemon juice (fresh or bottled)
1 teaspoon vanilla
3 cups powdered sugar (or more if needed to create spreading consistency)

Steps:

  • For Crust: In medium sized bowl, stir together flour and powdered sugar.
  • Cut in butter with pastry blender or the tines of two forks. Press into greased 10x15x1 pan. Bake in 350 degree oven for 10-15 minutes.
  • For Filling: Beat together eggs, lemon juice, zest and juice of fresh lemon, flour, sugar, baking powder and coconut. Mix well and pour over hot crust. Return pan to oven and bake uncovered for 25 minutes or until golden brown. Cool completely on wire rack.
  • For Frosting: Beat together butter, lemon juice, vanilla and powdered sugar. Spread over filling when cool.
  • Cut into bars & serve. Store covered.
