Time 5h30m

Yield 2 to 3 servings

Number Of Ingredients 25

One 3 1/2-pound rack St. Louis pork spareribs
Sawdust Rub, recipe follows
Apple juice in a spray bottle, for spritzing meat
Original BBQ Sauce, recipe follows
1 cup kosher salt
3/4 cup coarse black pepper
2/3 cup brown sugar
1/2 cup paprika
1/4 cup chili powder
1/4 cup granulated garlic
1/4 cup granulated onion
2 tablespoons cayenne pepper
6 cups ketchup
1 cup apple cider vinegar
1 cup Worcestershire sauce
3/4 cup molasses
1/2 cup brown sugar
2 tablespoons hot sauce, such as Louisiana
2 tablespoons lemon juice
1/2 cup chili powder
2 tablespoons granulated garlic
2 tablespoons onion powder
2 tablespoons kosher salt
2 tablespoons black pepper
1 tablespoon cayenne pepper

Steps:

  • Prepare a smoker for cooking between 250 and 275 degrees F. Trim the excess fat from the spareribs and cut out any sharp or cracked bones. Remove or score any silver skin.
  • Liberally rub the ribs with Sawdust Rub, shaking off the excess. Place the ribs in the smoker and cook, spritzing with apple juice every 30 minutes, until the fat starts to render from the surface of the ribs, about 3 hours.
  • Spritz a piece of heavy-duty foil with some apple juice and drizzle with about 3 tablespoons Original BBQ Sauce. Arrange the ribs on the foil, meaty-side down, and fold the foil on the ribs so that steam can escape but the juices are trapped inside. (If you multiply this recipe to do multiple racks, make sure each rack gets its own foil packet.) Put back in the smoker meaty-side down. Smoke until the meat pulls back from the bones by about 3/8 inch, another 1 to 1 1/2 hours. Let rest for 30 minutes, then slice into ribs.
  • Mix together the salt, pepper, brown sugar, paprika, chili powder, granulated garlic, granulated onion and cayenne in a bowl and break up any clumps by hand.
  • Combine the ketchup, vinegar, Worcestershire, molasses, brown sugar, hot sauce and lemon juice together in a large pot and whisk until blended. Place over medium heat and bring to a simmer, then add the chili powder, granulated garlic, onion powder, salt, pepper and cayenne. Continue to simmer 30 to 45 minutes, stirring occasionally to keep from burning.

Yield 6 people

Number Of Ingredients 10

6 slices sparerib pork chops
4 sharp cooking apples
3 onions
Salt
Fresh ground pepper, to taste
1 Tablespoon brown sugar
Parsley
Thyme
Bay leaf
6 ounces dry still cider (in Ireland, this would be hard alcoholic cider)

Put in a layer of apple slices, sprinkle them with half the sugar and spread half the onions over the top. Season with salt and pepper and place the chops on top. Place the bunch of herbs in the center. Cover with more onions, more apples and the remaining sugar. Place the pieces of reserved pork fat criss-crossed in a lattice over the top. Pour in the cider, cover the pot and bake at 350 degrees F for 1 hour. Lower the heat to 300 degrees F and cook for a further hour. PORK RIB ROAST WITH APPLES, FENNEL, AND POTATOES

Pork Rib Roast with Apples, Fennel, and Potatoes image

A French-cut rib roast is festive and regal, especially when encrusted with herbs and served on a bed of caramelized apples, fennel, onions, and baby potatoes. A sweet tip: Use cipollini onions if you can, and don't peel them. Their skins act like steamer jackets, so they get incredibly tender.

Time 4h5m

Yield Serves 8 to 12

Number Of Ingredients 12

1 bone-in pork rib roast (8 ribs; 6 to 7 pounds, depending on size), frenched, fat cap trimmed to 1/4 inch thick
Kosher salt (we use Diamond Crystal) and freshly ground pepper
1/3 cup Dijon mustard, plus more for serving
3 tablespoons reduced-sodium soy sauce
3 tablespoons finely chopped fresh rosemary leaves, plus 3 sprigs
2 tablespoons coriander seeds, crushed
2 tablespoons fennel seeds, crushed
1 1/2 pounds small potatoes (golf-ball-size), such as red bliss or fingerling
1 pound unpeeled cipollini onions, or 2 medium Vidalia onions, peeled and cut into 1-inch-thick wedges
3 small fennel bulbs (about 1 pound), trimmed and cut into 1-inch-thick wedges
3 tablespoons extra-virgin olive oil, divided
4 sweet-tart baking apples, such as Braeburn or Honeycrisp (1 3/4 pounds)

Steps:

  • Score rib-roast fat cap with the tip of a paring knife in opposite directions, to create a 1/2-inch crosshatch. Prick roast all over with knife tip at approximately 1-inch intervals, about 1 inch deep. Generously season with salt and pepper, rubbing it into meat with your hands. In a bowl, stir together mustard, soy sauce, chopped rosemary, and coriander and fennel seeds.
  • Rub mixture all over pork. Let stand at room temperature at least 1 hour and up to 2 hours, or loosely cover and refrigerate up to 1 day (return to room temperature at least 1 hour before roasting).
  • Preheat oven to 450°F. In a saucepan, combine potatoes and enough cold water to fully submerge them. Bring to a boil. Season with 1 tablespoon salt and boil until tender and easily pierced with the tip of a knife, 12 to 15 minutes. Drain and let cool slightly. Using a flattened palm or the bottom of a measuring cup, flatten potatoes slightly (but keep them intact).
  • Transfer potatoes to a large roasting pan with onions and fennel. Toss with 2 tablespoons oil, season with salt and pepper, and spread in a single layer. Scatter rosemary sprigs over vegetables. Place marinated pork in center of pan, atop vegetables.
  • Roast 15 minutes. Meanwhile, core and quarter apples and toss with remaining 1 tablespoon oil; season with salt and pepper. Reduce oven temperature to 350°F. Scatter apples into pan and continue cooking until vegetables are tender and a thermometer inserted in center of roast registers at least 135°F, 1 hour, 15 minutes to 1 hour, 45 minutes more, depending on size.
  • Transfer pork to a carving board, loosely cover, and let stand 20 minutes; discard rosemary. Turn oven off and return vegetables to oven to keep warm. Carve pork and serve with vegetables and more mustard.

DUBLIN PORK SPARERIBS WITH APPLES

Dublin Pork Spareribs with Apples image

In country households until the turn of the nineteenth century or even later, the pig was 'the gentleman that pays the rent' and was a very prized possession. He met his end in the autumn when the main part of the pork would have been pickled or turned into hams to see the family through the winter, but a few dishes for fresh pork survive and this is one of them.

Tips:

  • Choose the right pork spareribs: Look for ribs that are meaty and have good marbling. Avoid ribs that are too fatty or have a lot of bone.
  • Prepare the ribs properly: Remove the membrane from the back of the ribs and cut them into individual pieces. This will help the ribs to cook evenly.
  • Use a good marinade: The marinade is what will give the ribs their flavor. Be sure to use a marinade that has a good balance of sweet, sour, and salty flavors.
  • Cook the ribs low and slow: The best way to cook pork spareribs is to cook them low and slow. This will help the ribs to become tender and fall off the bone.
  • Baste the ribs regularly: Basting the ribs will help to keep them moist and prevent them from drying out.
  • Serve the ribs with your favorite sides: Pork spareribs are a great main course for a party or potluck. Serve them with your favorite sides, such as mashed potatoes, green beans, or corn on the cob.
