DUTCH APPLE PIE

Dutch Apple Pie image

There may never be an answer to what a true Dutch apple pie is. Some recipes add cream to the filling. Some call for making a deep-dish pie with a lattice top, and others top it with streusel. After a visit to a Pennsylvania Dutch diner, we decided to go with the streusel for a sweet and crunchy topping.

Time 7h30m

Yield 6 to 8 servings

Number Of Ingredients 17

2 1/2 cups all-purpose flour, plus more for the work surface
4 teaspoons granulated sugar
1/4 teaspoon fine salt
14 tablespoons cold unsalted butter, diced
1 large egg, lightly beaten with 2 tablespoons cold water
2 tablespoons fresh lemon juice
3 pounds baking apples, such as Golden Delicious, Cortland or Mutsu
2/3 cup granulated sugar
4 tablespoons unsalted butter
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Generous pinch freshly grated nutmeg
1 cup all-purpose flour
1/2 cup light brown sugar
1/4 teaspoon fine salt
6 tablespoons unsalted butter, at room temperature
1/2 cup chopped walnuts

Steps:

  • For the dough: Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter, and pulse until the mixture resembles yellow cornmeal mixed with pea-sized bits of butter. Add the egg, and pulse until the dough just comes together. (If the dough is very dry, add up to 1 tablespoon cold water.) Remove the dough, gently pat it into a round, wrap it in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour and up to 2 days.
  • For the filling: Meanwhile, put the lemon juice in a medium bowl. Peel and core the apples; cut each in half, and cut each half into 4 wedges. Add the apples and granulated sugar to the bowl with the lemon juice, and toss.
  • Melt the butter over medium-high heat in a large skillet. Add the sugared apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to extract as much liquid as possible. Return the juice to the skillet, and simmer over medium heat until it has thickened and lightly caramelized, about 10 minutes.
  • Toss the apples with the thickened juice, cinnamon, allspice and nutmeg in a medium bowl. Set aside to cool completely. (The cooled filling can be refrigerated for up to 2 days or frozen for up to 6 months.)
  • For the streusel topping: Whisk the flour, sugar and salt together in a medium bowl. Add the butter, and rub it into the flour mixture with your fingers until it has been absorbed. Mix in the walnuts.
  • To assemble and bake the pie: Position a rack in the lower third of the oven, place a baking sheet on it and preheat the oven to 375 degrees F. On a lightly floured work surface, roll the dough disk into a 12-inch circle. Layer it between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
  • Ease the dough round into a 9-inch pie pan. Fold and crimp the edges as desired. Add the filling, and spread it out to make an even layer. Squeeze handfuls of the streusel topping, and drop clumps of it on top of the filling to completely cover it.
  • Bake the pie on the preheated baking sheet until the crust and streusel are golden brown, 50 to 60 minutes. Let it cool on a cooling rack for at least 3 hours before serving. (The pie keeps well, covered, at room temperature for 24 hours or refrigerated for up to 4 days.)

PENNSYLVANIA DUTCH APPLE CRUMB PIE

Pennsylvania Dutch Apple Crumb Pie image

From my falling apart cookbook entitled Best-Loved Pennsylvania Dutch Recipes. Simple ingredients, easy assembly and spectacular presentation. When pressed for time, I have been known to substitute canned apple pie filling. This also works well for Cherry Crumb Pie by using canned cherry filling plus 1/4 teaspoon almond extract. A lifetime ago, on holidays, I was not allowed to enter my ex-inlaws house unless I had a Cherry Crumb Pie in my hands! ;) NOTE: If you use canned filling, just bake for 45 minutes at 350 degrees or until topping is brown.

MOM'S DUTCH APPLE PIE

Mom's Dutch Apple Pie image

This recipe is for my mom's tasty Dutch Apple Pie. I love making this for the holidays. It's easy to make and it has a wonderful flavor.

Provided by DownHomeDinner

Categories     Pie

Time 1h15m

Yield 1 pie, 8 serving(s)

Number Of Ingredients 14

5 1/2 cups thinly sliced baking apples (I usually use jonathon)
1 tablespoon lemon juice
1/2 cup granulated sugar
1/4 cup brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar
1/3 cup butter or 1/3 cup margarine
1 graham cracker crust
1 egg, for coating

Steps:

  • Beat one egg and brush into the bottom and sides of the graham cracker pie crust. Cook the pie crust for 5 minutes in the oven at 375 degrees.
  • After removing the pie crust from the oven, combine all filling ingredients and spoon into the crust.
  • Mix all topping ingredients with a pastry cutter until blended well and crumbly. Top filled pie with topping and bake for 50 minutes at 375 degrees.
  • You can use either a regular pastry pie crust, or a graham cracker crust. I use a graham cracker crust because it gives the pie a sweeter, more flavorful taste. I always use a store bought graham cracker crust only because it's faster than making one, however, if you have a great homemade graham cracker crust recipe, the pie will present prettier in a nice pie dish. I usually buy the 9 ounce graham cracker crust. It's a little larger (and will usually be labeled with "2 extra servings" on the package) because by the time you get your topping on the pie it's pretty full.
  • If you would prefer to make this recipe gluten free, use a gluten free flour mixture in the filling and the topping mixes. For the crust substitute with either a gluten free pastry, or a gluten free graham cracker crust, or simply bake without the crust in a pan and top with some vanilla ice cream (Edy's Grand French Vanilla is gluten free).
  • Yum! Enjoy.

PENNSYLVANIA DUTCH SOUR CREAM-APPLE PIE

  • Place the pie on the center oven rack; bake for 15 minutes; decrease heat to 350°; bake for 30 minutes.
  • Meanwhile, make the topping: in a big bowl, combine the flour, sugars, cinnamon, salt, and walnuts; add in the butter and stir with a fork, then switch to your hands rubbing the mixture gently between your fingers until it forms uniform crumbs; refrigerate until ready to use.
  • Remove pie from oven and carefully dump the streusel topping in the center, spreading it evenly over the surface with your hands.
  • Tamp the topping down lightly.
  • Return pie to oven, placing it so that the part that faced the back of the oven now faces the front.
  • Slide a foil-line baking sheet onto the rack below to catch any spills.
  • Continue baking for about 20 minutes or until golden brown.
  • Transfer pie to wire rack to cool for at least 2 hours before serving;
  • You may serve this pie chilled, so after it is thoroughly cooled, cover with loosely tented foil and refrigerate at least 2 hours.

GRANNY'S DUTCH APPLE PIE

Granny's Dutch Apple Pie image

This orginal recipe came from my grandmother's cookbook, a 1941 New American Cookbook. I have tweaked the recipe just a bit, but still it retains the old-fashioned goodness. I just made this recipe over Thanksgiving for company and it was a complete success! I've never really tasted another apple pie quite like this one, mmmm...

Time 1h5m

Number Of Ingredients 15

1 unbaked deep-dish pie shell (i use my fool-proof pie crust recipe)
1 1/2 to 2 lb apples, peeled, cored, and sliced thin. you may use granny smith, honey crisp, or a combination of your favorite pie apples.
1/4 c all purpose flour
1/2 c sugar
1/8 tsp salt
1/4 tsp nutmeg
1 tsp cinnamon
1 Tbsp lemon juice
TOPPING:
1 c all purpose flour
1/2 tsp salt
1 tsp cinnamon
1/2 c sugar
1/2 c brown sugar, lightly packed
1 stick butter, slightly softened

Steps:

  • 1. Preheat oven to 375 degrees. Place apple slices in a large bowl.
  • 2. Mix flour, sugar, spices, and lemon juice together and sprinkle over apple slices. Using a spatula or large spoon, mix together. (I just use my hands).
  • 3. Pour apple mixture into pie crust and dot with butter. Sprinkle crumb topping over apples (directions to follow).
  • 4. Place pie plate onto a foil-lined cookie sheet and bake for about 40 to 50 minutes or until topping is browned and apples are cooked and bubbly. Best serveed warm with ice cream.
  • 5. TOPPING: In a medium bowl, mix flour, salt, cinnamon and sugars together with a fork. Knead in butter until mixture is crumbly and the consistancy of wet sand. If too wet, you may add in a little more flour (about a tablespoon at a time) until consistancy is right. If mixture is too dry, you can add a little more butter.
  • 6. This topping recipe was actually told to me by my mother and grandmother. I was never given precise measurements, so I tweaked it the best I could and this is what I came up with. This topping tastes wonderful and works well for apple crisp, sweet potato casserole, or most any dessert that requires this type of topping.

DUTCH APPLE PIE JAM RECIPE - (4.3/5)

Dutch Apple Pie Jam Recipe - (4.3/5) image

Provided by june

Number Of Ingredients 10

4 cups prepared fruit (about 1 lb Granny Smith or other tart green apples)
1 1/4 cups water
1/2 cup raisins
2 tbsp fresh lemon juice
1 tsp ground cinnamon
1/4 tsp ground allspice
1 box sure-jell pectin
1/2 tsp butter or margarine (optional)
4 cups granulated sugar, measured in separate bowl
1 cup firmly packed brown sugar

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling. Peel and core apples; finely chop or grind. Add water and raisins. Measure exactly 4 cups into 6-or 8-quart saucepot. Stir in lemon juice, cinnamon and allspice. Stir pectin into fruit in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil ( a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in all sugars quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. Water must cover jars by 1 to 2 inches; add boiling water if needed. Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary).

Tips:

  • Select the right apples: Opt for firm, tart apples like Granny Smith, Braeburn, or Honeycrisp. These hold their shape well during baking, providing a delightful crunch and tangy flavor.
  • Prepare the apples thinly: Slicing the apples thinly ensures even cooking and a tender texture. You can use a sharp knife or a mandoline for precise and uniform slices.
  • Generously spice the filling: Don't shy away from adding a generous amount of spices to the apple filling. Ground cinnamon, nutmeg, and ginger are classic favorites that enhance the natural flavors of the apples.
  • Use a combination of sugars: Incorporating both granulated and brown sugar brings complexity to the filling. Granulated sugar provides sweetness, while brown sugar adds depth and a touch of caramel notes.
  • Dot with butter: Placing small pats of butter on top of the filling before baking creates delectable pockets of richness and moisture throughout the pie.
  • Chill the dough: Refrigerating the dough before rolling and baking prevents it from becoming too soft and sticky, resulting in a flaky and well-structured crust.
  • Pre-bake the bottom crust: Partially baking the bottom crust before adding the filling helps to prevent a soggy crust. This step allows the crust to set and create a barrier against the juicy filling.

Conclusion:

With careful attention to detail and a touch of culinary creativity, you can create an unforgettable Dutch apple pie that will delight your taste buds and leave you craving more. Experiment with different apple varieties, spice combinations, and crust variations to discover your perfect pie. Whether you prefer a classic lattice top, a crumbly streusel topping, or a combination of both, the possibilities are endless. So gather your ingredients, preheat your oven, and embark on a delightful baking journey that will fill your home with the enchanting aromas of this timeless dessert. Happy baking!
