1 ½ pounds 80% lean ground beef
1 red bell pepper, chopped
1 medium sweet onion, diced
1 (16 ounce) package frozen yellow and white whole kernel corn
1 (15 ounce) can light red kidney beans
1 (15 ounce) can dark red kidney beans
1 (15 ounce) can pinto beans
1 (14.5 ounce) can diced tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers
1 ½ cups water
¾ cup brown sugar
3 (1.25 ounce) packages chili seasoning mix
3 tablespoons distilled white vinegar
3 tablespoons yellow mustard

Steps:

  • Cook ground beef in a large pot over medium-high heat until browned and crumbly, 5 to 7 minutes. Add bell pepper and onion. Cook and stir until the pepper and onion have softened, about 5 minutes. Drain and discard grease.
  • Add corn, kidney beans, pinto beans, diced tomatoes, water, brown sugar, chili seasoning mix, and mustard to the pot. Cover and cook over medium heat for 20 minutes. Uncover, reduce heat to low, and cook until beans are tender, about 20 minutes more.

10 ounces mild diced tomatoes and green chilies (undrained)
16 ounces of bush's best beans in chili sauce (undrained)
15 ounces bush's best black beans (drained)

Steps:

  • Peel onion, chop coarsely and divide chopped pieces in half. Preheat large saucepan on medium-high for 2-3 minutes. Place beef, chili powder, seasoned salt, pepper and one-half of the onions in the pan. Cook for 5 minutes, stirring to crumble meat, or until meat is brown and no pink remains.
  • Stir in remaining ingredients, including remaining one-half of the onions. Bring to a boil, stirring often.

2 medium yellow onions, chopped (3 cups)
3 cloves garlic, finely chopped (1 tablespoon)
1 jalapeno (seeds and ribs removed for less heat, if desired), finely chopped (4 teaspoons)
Kosher salt and freshly ground pepper
2 tablespoons chili powder
2 tablespoons Dutch-process cocoa powder
2 tablespoons tomato paste
1 can (28 ounces) fire-roasted diced tomatoes
2 cups low-sodium chicken broth
Sour cream and finely sliced chives or scallions, for serving

Steps:

1 (7 ounce) can diced green chilies
1 tablespoon canned diced jalapeno (more if you want it hotter)
1 teaspoon ground black pepper
1 tablespoon garlic powder
4 tablespoons chopped dried onion (or real onion if you have it on hand)
1/4 cup beef broth (you can use chicken broth or water also)
1 tablespoon flour (or more for thickening after it's cooked)
