- Preheat oven to 350 degrees.
- Heat a tablespoon or so of Olive Oil in skillet and add garlic and onion. Saute for a minute or two.
- Add ground beef and cook until browned; Drain.
- Stir in seasonings and tomato sauce over medium heat; Add refried beans and mix thoroughly.
- Generously spoon beef and bean mixture into floured tortillas, sprinkle with cheese, roll up and place seam side down in a lightly greased 8" x 8" square casserole dish.
- Spread any remaining filling on top and bake in oven for 20-25 minutes, or until heated through.
- Sprinkle remaining cheese on top a few minutes prior to removing from oven or immediately after removing from oven.
- Serve with sour cream, guacamole, hot sauce, etc.
EASY MONEY BREAKFAST BURRITOS
Yummy burritos that are so good that my husband was selling them for a buck apiece at corp school in the Navy. I was making them every night, and we bought a new couch with the money! These freeze really well; just defrost and eat. I also add fresh cooked mushrooms in these on occasion. I do find that these taste better when made ahead of time and eaten at a later time.

- Place the pork sausage and onion into a skillet over medium heat, and cook until the sausage is browned, about 10 minutes. Break the meat apart into crumbles as it cooks. Drain the excess grease.
- In a separate skillet over medium heat, melt the butter until the foam subsides, and cook and stir the beaten eggs with the chilies until softly scrambled but not wet, about 3 minutes. Transfer the scrambled eggs into a large bowl, and stir in the cooked sausage mixture.
- Place a tortilla onto a microwave-safe plate, and cook in the microwave on High setting for 10 to 20 seconds. The tortilla should be warm and pliable. Spoon about 1/2 cup of the sausage and egg mixture in a line down the the tortilla, slightly off center. Top with about 1 tablespoon of shredded cheese, and 1 tablespoon of salsa. Fold 2 opposite ends of the tortilla over the filling. Press the 2 ends down so they stay folded. Carefully roll the shorter unfolded edge over the burrito, pushing the filling to the back of the roll as you go, to snugly enclose the filling. Keep the 2 ends folded as you roll. Wrap in foil if desired. Repeat with the rest of the tortillas.

- Cook beef over medium heat until cooked, Drain.
- Add half of taco seasoning packet and cook 2 more minutes.
- Stir in tomatoes with chiles, and refried beans. Cook 5 minutes.
- Spoon about 1/4 cup of mixture evenly in center of tortillas, sprinkle with cheese, then roll up and place in 9x13 pan coated with cooking spray.
- Stir together crushed tomatoes and last if taco seasonings, and pour over tortillas.

- Set out a 9x11 baking pan to place folded burritos in.
- Whirl Black Beans (drained slightly) in a food processor for 3-5 seconds to make a thick paste.
- Warm up tortillas in the microwave. Place all 12 on a plate on high for about 45-60 seconds.
- Spread bean paste on tortilla. Layer on veggies, salsa, and cheese, (leftover chicken, shredded would also be good).
- Roll up, folding in ends.
- Place seam-side down into baking pan.
- Repeat process for all 12.
- Place baking pan in freezer until burritos are frozen solid.
- Wrap individually in foil/freezer paper and place in a large Ziploc bag for easy grab-and-go lunch.
- To reheat: cover with paper towel and microwave for 30-60 seconds, depending on microwave. Top with extra salsa, sour cream or plain yogurt with cumin.

EASY CHICKEN BURRITOS WITH MOJO

- Make the Mojo Sauce: Put the garlic, chilies, cilantro, lime juice, orange juice, and olive oil into a blender and process until smooth. Taste and adjust seasoning with salt and pepper.
- To make the burritos: Warm the tortillas for 30 seconds in a dry skillet or on the grill until pliable. Place some chicken down the center of a tortilla and top with rice and beans, avocado, grated cheese, and Mojo Sauce. Roll up the burrito and serve topped with a generous drizzle of sour cream; garnish with cilantro leaves and a squeeze of lime juice.
- Put all the ingredients into a heavy bottomed pot, stir well, and bring to a boil over medium-high heat. Reduce the heat to a simmer, cover, and cook over low heat until the rice has absorbed the water, about 15 to 20 minutes. Remove from the heat and let sit, covered, for 5 minutes. Discard the garlic and bay leaf, fluff with a fork, and serve.

- Quick soak the beans: Put beans in a pot and cover with water by 2 inches. Bring to a boil and cook for 2 minutes. Remove from heat, cover, and let soak for 1 hour. Drain the beans.
- In the same pot, heat the olive oil. Add the onion, jalapeno pepper, garlic, and bay leaf and cook until the vegetables begin to soften, about 5 minutes. Add the beans and cover with water by about 1 inch. Bring to a boil, reduce the heat, cover, and simmer for 1 to 1 1/2 hours, or until the beans are tender. Remove the bay leaf and discard. - Saute the onion with the peppers in a dutch oven with a little juice from top of black bean can. Saute until golden. Drain all canned ingredients very well or it will be soupy.
