EASY CHICKEN MANICOTTI
A friend of mine gave me the original recipe, which of course I promptly modified. This is simple and yummy! Note that the ricotta does not stay IN the shells, it blends with the sauce to make everything extra cheesy.

Steps:
- 1. Preheat oven to 350. Put ricotta in a bowl, and mix herbs to taste. (recommended: garlic salt or powder, fresh ground pepper, basil/oregano, Italian herb mix.) Mix in chicken until thoroughly coated.
- 2. Spray a 13" x 9" glass casserole dish with non-stick cooking spray. Pour one can of sauce in the bottom of the pan and sprinkle with one bag of cheese. Stuff chicken-ricotta filling into the manicotti and arrange in the pan. Cover with the other can of sauce and the other bag of cheese.
- 3. Cover with foil and bake for 40 minutes. Uncover, turn the temperature up to 375 and bake for 20 more minutes. Let stand for 5 minutes after removing from oven. Serve with a spatula.
Tips:
- Prep Ahead: Make the manicotti filling and sauce a day ahead and store them separately in the refrigerator. This will save time on the day you want to serve the dish.
- Use a Variety of Cheeses: Don't be afraid to experiment with different types of cheeses in the filling. A blend of ricotta, mozzarella, and Parmesan is a classic choice, but you can also try adding in some Asiago, Fontina, or Provolone.
- Cook the Manicotti Al Dente: Be careful not to overcook the manicotti shells. They should be cooked al dente, meaning they should be tender but still have a slight bite to them.
- Don't overcrowd the Pan: When baking the manicotti, don't overcrowd the pan. Leave some space between each manicotti so that they can cook evenly.
- Serve with a Simple Salad: Chicken manicotti is a rich and hearty dish, so it's best served with a simple salad on the side. A light green salad or a Caesar salad would be a good choice.
Conclusion:
Chicken manicotti is a classic Italian dish that is sure to impress your family and friends. It's a delicious and versatile dish that can be customized to your own taste. With a little planning and effort, you can make chicken manicotti that is sure to be a hit at your next dinner party.
