QUICK AND EASY SALSA WITH BLACK BEANS AND CORN

Quick and Easy Salsa With Black Beans and Corn image

Yesterday was my turn to bring snacks to my Cuban salsa class -- the dance that is. After scanning dozens of recipes, I couldn't find what I wanted so I created this one. After watching my classmates tip the bowl, I decided it was worth posting. While the ingredients are familiar, the ratio of tomatoes, beans and corn is quite different from the dozens already here. So easy, its a crowd pleaser.

I came up with this topping/side dish while trying to figure out how I could get the only two vegetables my husband eats into one dish. It's great over pan-fried fish, a healthy alternative to queso on enchiladas, and wonderful with brown rice. It's spicy and simple. Like our love!

EASY CORN SALSA

Easy Corn Salsa image

I had to make something QUICK for a Mexican themed birthday party, so I threw this together and got RAVE reviews. Some ate it separately most though added it to their burrito and/or fajita mixin's...As usual, I rarely measure, so these measurements are appproximate and by memory...sorry! TRY to make the night before, but it's still good when made on the fly!

  • Choose ripe tomatoes: Ripe tomatoes will give the salsa a more vibrant flavor. Look for tomatoes that are deep red in color and free of blemishes.
  • Use a variety of peppers: Different types of peppers will give the salsa a different flavor profile. For a mild salsa, use green bell peppers. For a medium salsa, use a combination of green and red bell peppers. For a hot salsa, use jalapeños or serrano peppers.
  • Add some herbs: Herbs like cilantro, basil, and oregano will add a fresh and flavorful taste to the salsa. Be sure to chop them finely before adding them to the salsa.
  • Season to taste: Once you've added all of the ingredients to the salsa, be sure to season it to taste with salt, pepper, and lime juice. You can also add a pinch of sugar if you find the salsa to be too tart.
