SUPER EASY FRUIT COCKTAIL COBBLER CAKE
This is a super quick, super easy dessert to make. Three ingredients and two minutes of prep time is all it takes. Doesn't get any easier. I've used other items instead of fruit cocktail like canned pears, canned blueberries or canned cherries. I've also sprinkled coconut on top of the cake before baking which adds great flavor. Serve plain, with Cool Whip or your favorite ice cream.

Steps:
- Combine the flour and sugar.
- Add the butter, mixing as you go, until the mixture forms a soft dough. It can be slightly crumbly, but you want it to hold together when you squeeze it.
- Spray a 9x9 baking dish with non-stick cooking spray.
- Put the fruit in the dish - you will probably need about 4 cups of berries or chopped fruit. You want to create a thick layer that comes about two inches up the sides.
- If the fruit is particularly tart, sprinkle with a light layer of sugar. If the fruit is soft and sweet, you don't need it.
- Take the dough by the handful and pat it into disks that are about 1/4-inch to 1/2-inch thick. Lay them on top of the fruit, continuing with the patties, until it is covered.
- Bake the cobbler at 350 degrees for about 45-50 minutes, until the crust is light golden brown. Let cool slightly, then serve with ice cream.

EASY EASY FRUIT COBBLER
My grandmother made this for us right after our first child was born, and it was soooo good! So of course, I asked her how she made it, and I couldn't believe how easy it was! So, I just had to share. You can use any fruit pie filling that tickles your fancy! We had it with peach. (originally)

Steps:
- 1. Preheat oven to 350 degrees. Grease or spray a 9 x 9 baking dish. Pour the box of cake mix (dry) on the bottom of the baking dish.
- 2. Cut the butter/margarine into chunks and lay them evenly across the entire bottom of the dish.
- 3. Gently pour and spread your pie filling across the top, careful not to move around the cake mix.
- 4. Bake about 10 minutes. You'll see the cake mix coming up from the bottom, forming a crust on top. The butter will cause it to brown. Once it has browned to your liking, take it out-cool enough to eat, add some whipped cream or vanilla ice cream and enjoy!
- 5. **I've never tried to use a sugar free/low sugar version of this, although I SHOULD! But all the ingredients, except the butter of course, are available in those varieties. I cannot imagine why it wouldn't work. If you try it, please let me know what you think! It's been a while since making this recipe, so if anyone has any suggestions, bring 'em on!
Tips:
- Choose the right fruit: Use fresh, ripe fruit for the best flavor and texture. If using frozen fruit, thaw it before using.
- Use a variety of fruits: Don't be afraid to mix and match different fruits to create your own unique cobbler. Some popular combinations include apples and cinnamon, peaches and cream, and blueberries and lemon.
- Sweeten to taste: The amount of sugar you need will depend on the sweetness of the fruit. Start with a small amount and add more to taste.
- Don't overcook the cobbler: The fruit should be tender but still hold its shape. Overcooked fruit will become mushy and lose its flavor.
- Serve warm or cold: Cobbler can be served warm with a scoop of vanilla ice cream or cold as a refreshing dessert.
Conclusion:
Fruit cobbler is a delicious and easy dessert that can be enjoyed by people of all ages. With a little planning and effort, you can create a cobbler that is sure to impress your friends and family. So next time you're looking for a sweet treat, give fruit cobbler a try. You won't be disappointed!
