1 10 oz bag mini marshmallows (about 5 cups)
1/2 cup peanut butter
6 cups Rice Krispie cereal*
8 oz chocolate chips (about 1 1/3 cups)
2 teaspoons vegetable oil

Steps:

  • Lightly grease a 9x13 inch pan with butter or non-stick cooking spray.
  • In a large saucepan melt the butter, mini marshmallows and peanut butter together over low heat while stirring gently.
  • Once melted, remove from the heat and stir in the Rice Krispies.
  • Press the mixture into the pan (lightly spray your hands with non-stick cooking spray to avoid the mixture sticking to your hands).
  • Add the chocolate chips (or chopped chocolate) to a medium-sized heatproof bowl. Microwave for 45-second intervals on medium power (not high or standard), stirring in between each burst.

6 tablespoons unsalted butter
16 ounces mini marshmallows
1/2 teaspoon kosher salt
6 tablespoons peanut butter
2 teaspoons vanilla extract
6 1/2 cups crispy rice cereal
2 1/2 cups coarsely crushed graham crackers (about 9 rectangles)
1 cup milk chocolate chips
1/4 cup rainbow sprinkles, plus more for decorating

Steps:

  • Line an 8-inch square baking dish with parchment paper, allowing 1-inch wings to hang over the edges; set aside.
  • In a large pot over medium heat, melt the butter. Add the marshmallows and salt and cook, stirring, until the marshmallows are melted and smooth. Remove from the heat and stir in the peanut butter and vanilla (the peanut butter can still be swirly). I make really good peanut butter bon bons but I haven't in years so I looked up a recipe and made it all wrong. I did not even have powdered sugar and attempted to whiz it through my food processor. Did not work. Television has lied to me. Haha. Anyways, so after that mess up, I threw everything into a pan and froze it for any hour and it ended up being my lovermans favorite dessert that I made. Go figure. I didn't use measurements while making this. I've made it twice and both times came out pretty good.

3 tablespoons butter
2 cups Rice Krispies
