3 tablespoons pear brandy
1/2 (1-pound) box brown sugar
1 orange, zested and juiced

Steps:

  • Simmer pear halves and brandy in a saucepan for 20 minutes over medium heat. In a separate saucepan, combine sugar, zest, and orange juice. Set aside. When pears are soft, transfer to a blender and puree*. Add puree to saucepan and simmer for 1 1/2 hours over low heat, stirring occasionally. 4 pounds pears, quartered and cores removed
¼ cup white sugar
¼ cup granular sucrolose sweetener (such as Splenda®)
2 teaspoons grated orange zest
¼ teaspoon ground nutmeg
¼ cup orange juice
1 (.25 ounce) envelope unflavored gelatin powder

Steps:

  • Place the pears into a large pot, and fill with enough water to cover. Bring to a boil, then cook over medium heat until fruit is soft, about 30 minutes. Drain and transfer the pears to a blender. Puree the pears and return them to the pot.
  • Stir the sugar, sweetener, orange zest, nutmeg and orange juice into the pot and bring to a boil. Cook, stirring frequently until slightly thickened, about 15 minutes. 7 -8 large ripe pears, chopped
3/4 teaspoon cinnamon
1 dash clove
1/4 teaspoon cardamom
1 tablespoon lemon juice
1/4 cup Splenda sugar substitute
1/2 teaspoon vanilla

Steps:

  • Place pears in pan with no added liquid.
  • Cook until soft.
  • Mash.
  • Put thru a ricer or sieve and discard seeds and skin.
  • Add spices and lemon juice and return to stove.
