Yield Makes one 9-by-5-inch loaf

Number Of Ingredients 9

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
1 3/4 cups cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
3 large eggs, room temperature
1 teaspoon pure vanilla extract
2/3 cup buttermilk, room temperature
1/4 cup plus 1 tablespoon Dutch-process cocoa powder

Steps:

  • Preheat oven to 350 degrees. Generously butter a 9-by-5-inch loaf pan; set aside. Whisk together the cake flour, baking powder, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating until combined after each addition and scraping down the sides of the bowl as needed. Mix in vanilla. Add flour mixture in 2 batches, alternating with the buttermilk and beginning and ending with the flour. Set aside 1/3 of the batter.
  • In a bowl, mix cocoa and 1/4 cup plus 2 tablespoons boiling water with a rubber spatula until smooth. Add the cocoa mixture to the reserved cake batter; stir until well combined.
  • Spoon batters into the prepared pan in 2 layers, alternating spoonfuls of vanilla and chocolate to simulate a checkerboard. To create marbling, run a table knife (or wooden skewer) through the batters in a swirling motion.
  • Bake, rotating the pan halfway through, until a cake tester comes out clean, 40 to 50 minutes. Transfer pan to a rack to cool 10 minutes. Turn out cake from pan and cool completely on the rack. Cake can be kept in an airtight container at room temperature up to 3 days.

Time 50m

Number Of Ingredients 19

1/2 c. semi sweet chocolate chips
1 c. unsalted butter, softened
2-1/4 c. powdered sugar
1/4 c. unsweetened cocoa powder
2 T. half and half
1 tsp. pure vanilla extract
1/4 tsp. kosher salt
1 oz. good quality semisweet chocolate - I use this
2 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. kosher salt
1 c. unsalted butter, softened
1-1/2 c. sugar
3 large eggs
1 T. pure vanilla extract
1/2 c. whole milk
1/2 c. + 1 T. sour cream, divided
3 T. unsweetened cocoa powder
1/8 tsp. baking soda

Steps:

  • for the marble cake: Preheat oven to 350° F. Very lightly spray bottom and sides of a 15" x 10" x 1" rimmed pan with cooking spray. This is the pan I use. Set aside.
  • In a small cup or bowl, gently melt the semisweet chocolate. Take care to not let it scorch. Set aside to cool to room temperature.
  • In small bowl, whisk flour, baking powder, and salt. Set aside.
  • In large bowl, beat butter and sugar with electric mixer on medium speed for 2 minutes, scraping bowl occasionally, until fluffy. Beat in eggs, one at a time, just until smooth. Beat in vanilla. On low speed, beat in one-third of the flour mixture, then the whole milk, beating after each addition, just until smooth. Repeat with flour mixture and then 1/2 cup of the sour cream, ending with flour mixture, scraping side of bowl occasionally. Spread 3-1/2 cups of vanilla batter evenly into pan.
  • In a small cup or bowl, whisk together cocoa powder and baking soda. Add to remaining vanilla batter along with remaining 1 tablespoon of sour cream and cooled melted semisweet chocolate. Fold until thoroughly combined into a chocolate batter. Spoon chocolate batter by generous tablespoonfuls evenly onto vanilla batter. Cut through mixture several times with a butter knife for marbled design. Firmly tap pan on counter several times to eliminate air bubbles and settle the batter evenly into the pan.
  • Bake 20 to 22 minutes, or until toothpick inserted in center comes out clean. Set on baking rack to cool completely.
  • For the double chocolate buttercream: In medium microwavable bowl, gently microwave chocolate chips uncovered until they are about halfway melted. Take care to not scorch the chocolate. Remove from microwave and stir until smooth. Let cool for 5 to 10 minutes, until just barely warm. In small bowl, whisk together powdered sugar, baking cocoa, and kosher salt. Add butter to melted and cooled chocolate, along with powdered sugar mixture, half and half, and vanilla. Beat with electric mixer on medium speed until smooth and creamy, scraping side of bowl occasionally. Spread on top of cooled cake. Cut cake into pieces and serve.

SIMPLE MARBLE CAKE

This cake is something to bake just when you need a little something to fill you up and keep you going. Credits to my good friend Isla.

Steps:

  • Preheat the oven to 180 degrees.
  • Beat the butter and sugar together. Add in the eggs one at a time, mixing thoroughly after each one.
  • Add in the vanilla extract. Now mix in the flour one spoonful at a time, making sure that all the ingredients are mixed in. Leave half the mixture aside.
  • With the other half of the cake mixture, add in the cocoa powder. Now put both batters into a greased circle tin, like a half moon.
  • Marble the batters by using a spatula and swirling it around through the mixture. Bake in the oven for 40 minutes.

Tips:

  • Mise en Place: Before you start baking, make sure you have all the ingredients and equipment you need. This will help you avoid scrambling around in the middle of the recipe.
  • Use Room Temperature Ingredients: For best results, use room temperature ingredients, especially butter and eggs. This will help the ingredients blend together more easily and create a smoother batter.
  • Cream the Butter and Sugar: When creaming the butter and sugar, make sure to do it until the mixture is light and fluffy. This will help incorporate air into the batter and create a more tender cake.
  • Add the Eggs One at a Time: When adding the eggs to the batter, add them one at a time, beating well after each addition. This will help prevent the batter from curdling.
  • Do Not Overmix the Batter: Overmixing the batter can make the cake tough. Mix the batter just until the ingredients are combined.
  • Bake the Cake at the Correct Temperature: Bake the cake at the temperature specified in the recipe. If the oven is too hot, the cake will brown too quickly and may be undercooked in the center. If the oven is too cool, the cake will take too long to bake and may be dry.
  • Let the Cake Cool Completely: Before frosting or serving the cake, let it cool completely. This will help the cake set properly and make it easier to handle.

Conclusion:

Marble cake is a classic dessert that is both delicious and visually appealing. With its swirled layers of chocolate and vanilla batter, it is sure to be a hit with people of all ages. By following these tips, you can make a marble cake that is perfect for any occasion.
