EASY RED PASTA SAUCE
Plain, simple, no frills, basic red sauce that tastes great on a variety of pasta and is not watered down. For making a good sauce, use canned tomatoes. Except for the summer months, the 'fresh' tomatoes are usually harvested when green and left a long time to ripen. Add more red pepper flakes if you like your sauce spicy!

QUICK, EASY, CREAMY, TOMATO PASTA SAUCE
A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

CHEAP & EASY CLAM SAUCE FOR PASTA
Super cheap if you tend to keep garlic and olive oil on hand at all times like I do and can find a can of clams for more like $0.99 instead of $2.50 (luckily, I can at one of the cheaper grocery stores). If not, it's still worth it. I keep parsley frozen flat in the freezer and just break off a piece to add, but you can go with anything along the lines of the basil, Italian seasoning, parsley family, really - very versatile that way. Mix and match spices or even oils, add milk or don't, and it will still be delicious and fast. Aiming for healthier? Excellent over whole wheat pasta, too!

PASTA AND EASY ITALIAN MEAT SAUCE
Steps:
- Heat the butter and oil in a large saucepan over medium heat. Stir in the carrot, onion, and garlic. Add the ground beef, and cook until it turns from pink to brown, about 5 minutes.
- Add the tomatoes and their liquid, crushing them with the back of a large spoon. Stir in the milk, bay leaf, thyme, nutmeg, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Simmer for 20 minutes.
- Meanwhile, in a large pot of boiling salted water, cook the fettuccine until al dente according to the package instructions. Reserve about 1/2 cup of the cooking water, and drain the fettuccine. Return it to the warm pot. Add the meat sauce, and toss. Add the reserved pasta water as needed if the sauce seems dry. To serve, sprinkle with Parmesan.
- regional ragù
- Our sauce is based on the famed Ragù alla Bolognese (sauce in the style of Bologna). The addition of milk might seem to be unusual, but it's traditional in northern Italy-where butter and cream, as well as milk, are essential to the cuisine.
SICILIAN EASY PASTA SAUCE
This is how my mother taught me to make sauce, with a few of my own touches. It's a little unusual in that all the tomato comes from canned products, but it makes it easy to whip some up. This is a large quantity because I always make enough to freeze. You can make it with any number of meats or without if you prefer. Use the best tomato products you can afford (Campbell's, Contadina). You don't need any salt since the canned products tends to have plenty. I use the low sodium versions when I can find them. To freeze, put cooled sauce in old plastic tubs from whipped cream. When you want to use one, just dip the container in hot water and the sauce will pop out into a saucepan. Heat on low. It will take about the same time to warm up as it does to boil your pasta.

Steps:
- Saute the diced onion in a little bit of olive oil, butter, or cooking spray, in a medium saucepan over medium heat. (If you like garlic, you could add a few diced garlic cloves too).
- Add the stewed tomatoes and the tomato paste. Stir to combine.
- Add the brown sugar. Start with just 1/2 a cup. If you like it sweet, keep adding more. Here is when you can add salt, pepper, and any herbs like basil and oregano.
- Turn the heat down to low and simmer for at least an hour. Stir every so often. The stewed tomatoes will keep breaking down the longer you cook it, so you can keep going for a less chunky sauce. The perfect sauce for any pasta that can also be used as a pizza sauce, or for meatballs, etc.

Tips:
- Use fresh, ripe tomatoes. This will give your sauce the best flavor.
- Don't overcrowd the pan. If you add too many tomatoes to the pan at once, they will steam instead of sautéing. Cook the tomatoes in batches if necessary.
- Cook the tomatoes until they are soft and caramelized. This will bring out their natural sweetness and flavor.
- Add a splash of vinegar or lemon juice. This will brighten the flavor of the sauce.
- Season the sauce to taste. Add salt, pepper, and other herbs and spices to taste.
- Let the sauce simmer for at least 30 minutes. This will allow the flavors to meld and develop.
- Serve the sauce over your favorite pasta or use it as a topping for pizza, chicken, or fish.
Conclusion:
Making a delicious pasta sauce at home is easy and rewarding. With a few simple ingredients and a little time, you can create a sauce that is bursting with flavor and perfect for any occasion. So next time you're in the mood for pasta, be sure to try one of these recipes. You won't be disappointed!
