We all loved my mom's super-rich scalloped potatoes. I tweaked her recipe to keep all the flavor, but cut the fat. The cheese blend is the clincher. It's all about experimenting. -Diane Bramlett, Manteca, California

EASY MICROWAVE SCALLOPED POTATOES
This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

EASY CHEESY SKILLET SCALLOPED POTATOES WITH MUSHROOMS
Too hot to turn the oven on? You can still have delicious creamy potatoes with this savory recipe. Peeling is optional, and any kind of parmesan you have is fine. Note: Thanks to the reviewers who made this the second-place winner! I've noted the things you said, and made a few adjustments. Note: This is a stovetop recipe. I do not recommend making it in the oven. Although it can be done successfully, it takes about twice as long to cook using raw potatoes. Using cooked or partially cooked potatoes does not give the sauce a chance to thicken properly. The dish also has a serious tendency to scorch in the oven.

Tips:
- Select the Right Potatoes: Choose starchy potatoes like Russet, Yukon Gold, or Idaho for a creamy texture. Avoid waxy potatoes like Red Potatoes or New Potatoes as they hold their shape better and may not break down as desired.
- Slice Potatoes Evenly: Consistent thickness ensures even cooking. Use a mandoline slicer for precise and uniform slices.
- Layer Potatoes Properly: Overlapping potato slices in layers promotes even cooking and prevents gaps. Arrange them in a single layer for a crispy top and tender interior.
- Season Wisely: Add flavor to each layer of potatoes with salt, pepper, garlic powder, and paprika. You can also sprinkle herbs like thyme, rosemary, or parsley for extra aroma.
- Use Fresh Ingredients: Fresh onions, celery, and carrots enhance the overall flavor of the dish. Feel free to add other vegetables like bell peppers, mushrooms, or zucchini for a colorful variation.
- Choose the Right Cheese: A blend of sharp cheddar and Parmesan provides a rich and flavorful topping. Experiment with different cheeses like Gruyère, Gouda, or Monterey Jack for a unique taste.
- Cover and Bake: Covering the dish during baking creates steam, promoting even cooking and preventing the top from drying out.
- Uncover and Brown: Remove the cover towards the end of baking to allow the top to brown and create a crispy crust.
Conclusion:
Scalloped potatoes are a versatile and comforting dish that can be enjoyed as a main course or side. With its creamy interior, crispy top, and flavorful layers, it's a perfect addition to any meal. Whether you prefer a classic recipe or one with a twist, these tips will help you create a delicious and memorable scalloped potato dish that everyone will love.
